Smooth Vegan Chocolate-Banana Pudding

Chocolate pudding made from tofu???
Here's a quick and easy chocolate pudding recipe that doesn't need cooking or set up time. In our Armenian Orthodox lenten discipline, we abstain from all animal products for this 40-day period. This is a great vegan dessert recipe.
Ingredients:
1 tub silken tofu
1 banana
1/2 cup cocoa powder (unsweetened)
Agave nectar (about 1/3 to 1/2 cup) - you can also use sugar
1 tsp vanilla extract
The How-To:
Drain water from the tofu and use about 8 or so paper towels to wrap the tofu up. Place a dinner plate or heavy plate on top of the wrapped tofu and set aside for about a 1/2 hour. This is to help squeeze any extra water out of the tofu.
In your food processor, place the drained (and unwrapped tofu), 1/2 cup cocoa powder, 1 ripe banana and 1/3 to 1/2 cup agave nectar (to taste). Pulse at first to get all the banana going, and then run until smooth. Stop and scrap the sides with a rubber spatula if needed. Add vanilla extract and mix one final time.
Spoon the pudding into small bowls. Top of chopped walnuts if that sounds good to you. Enjoy. This makes four servings.
