Chocolate pudding made from tofu???

Here's a quick and easy chocolate pudding recipe that doesn't need cooking or set up time. In our Armenian Orthodox lenten discipline, we abstain from all animal products for this 40-day period. This is a great vegan dessert recipe.

Ingredients:

1 tub silken tofu

1 banana

1/2 cup cocoa powder (unsweetened)

Agave nectar (about 1/3 to 1/2 cup) - you can also use sugar

1 tsp vanilla extract

The How-To:

Drain water from the tofu and use about 8 or so paper towels to wrap the tofu up. Place a dinner plate or heavy plate on top of the wrapped tofu and set aside for about a 1/2 hour. This is to help squeeze any extra water out of the tofu.

In your food processor, place the drained (and unwrapped tofu), 1/2 cup cocoa powder, 1 ripe banana and 1/3 to 1/2 cup agave nectar (to taste). Pulse at first to get all the banana going, and then run until smooth. Stop and scrap the sides with a rubber spatula if needed. Add vanilla extract and mix one final time.

Spoon the pudding into small bowls. Top of chopped walnuts if that sounds good to you. Enjoy. This makes four servings.

I love your response Ahnoosh. I often say "I hope you will take my comment in the [helpful] spirit in which it was intended". Unfortunately most hubbers are spoiled with the complimentary drivel that predominates here, but doesn't "grow" any of us.

This looks really good. Could I make a suggestion? Remove the phrase "probably not too bad for you" from your summary (which I saw in the feed). Say something like: Quick and easy no-cook chocolate pudding recipe. This decadent low fat treat is smooth and sweet, but contains no milk. This tofu-based recipe is a healthier alternative to classic chocolate pudding. (You can delete my comment.)
