Soft Gingerbread Cookies
1/2 cup of brown sugar
1/2 cup of lard
1 teaspoon of salt
1 teaspoon of cinnamon
1 teaspoon of ginger
1 cup of table molasses
1/2 cup of water
1 tablespoon of baking soda
3 1/2 - 4 cups of flour
Cream the sugar and the lard into a bowl and add seasonings.
Add the molasses.
Dissolve the baking soda into the water and add into the batter. Stir.
Gradually add the flour until the dough is stiff enough to roll out.
Roll the dough 1/4 inch thick on a floured board and cut into desired shapes.
Bake for 6-8 minutes at 350 deg F.
Note: For softer cookies, underbake slightly.
