Healthy Southern Cooking Rules!

I love to cook my mother and grandmother's old recipes from the deep south, but I'm also developing a knack for putting a healthy spin on them. Most everything from the south traditionally has bacon in it (I've even seen jello salad with bacon!). What I've discovered over the past few years is that many times extra virgin olive oil tastes very similar when added to a recipe that calls for bacon or bacon fat and as we all know, is much healthier for us. Even without the bacon, there is a method for cooking "southern". Get ready for a big bowl of Yummy!

Yields: Serves 4 people

Southern Lima Beans

  • 12 oz (about 1 1/2 cup) frozen baby lima beans, (use fresh if you can get them)
  • 1 heaping teaspoon salt, (I use kosher salt because it's milder)
  • 1 1/2 tablespoon extra virgin olive oil, (may substitute canola oil, as this is also rich in monounsaturated fats)
  • Enough water to cover beans by 1 inch

Southern Lima Beans

  1. Dump all the ingredients into a pot and bring to a boil on your stovetop.
  2. Place a lid halfway on top of the pot. This allows some of the steam to escape during cooking, making the beans wonderfully tender.
  3. Simmer for one hour. Check beans every 20 minutes and add more water if needed.

Dump everything in a pot with enough water to cover beans plus one inch over,  You're going to boil the heck out of these beans.  Don't worry, they will come out tender and melt-in-your-mouth delicious!
