Spaghetti with tomato and herbs
1/4 cup breadcrumbs
3 tbsp olive oil
3 cloves garlic, crushed
1 cup chopped fresh herbs (basil, coriander, parsley)
4 tomatoes, chopped
1/4 cup chopped walnuts
1/4 cup grated Parmesan, and a little for serving
1. Heat the grill to medium and put the breadcrumbs under for a few seconds until they turn a light golden color.
2. Cook the spaghetti in boiling water until done and drain and set aside.
3. Heat the olive oil in a large frying pan and cook the garlic until soft.
4. Add another tablespoon of olive oil and the herbs, tomatoes, walnuts and Parmesan. Add the pasta to the pan and toss. Top with breadcrumbs and extra Parmesan.
Tip: If you want to add more flavor to this dish, try adding sliced olives, mushrooms, or a little heat with chili flakes.
