Spicy Avocado Soup with Lime

Avocado was a learn to love food. And to be honest, I really couldn’t think of any other ways to eat it besides guacamole. As I was searching for recipes with avocado, I realized I wanted the avocado to be actually incorporated into my dish, and not just laying on top. Not that using avocado as a topping is a bad thing, I just wanted something different.
The food-venterous side of me wanted to learn more about them and figure out ways to incorporate them into my diet more.
I stumbled across a peculiar green avocado soup recipe when trying to find some avocado recipe ideas on Pinterest and was intrigued.
After having tried some of the avocado soup recipes, I wanted to make one with more of a kick. I added some of my favorite Mexican ingredients to a very basic recipe and have found the right combination of flavors for my well-refined palette… HA! And who doesn't love eating soup during the fall and winter?
This soup is so velvety! Serve this with melted mild cheddar cheese, some shakes of hot sauce and dollops of sour cream- god, it is so good.
Soups always tend to get me full fast, due to the broth filling up my stomach. The addition of fatty Avocado will help to keep you satisfied for longer as well, reducing your cravings.
I make avocado soup bi-weekly because it helps to curb my appetite, is full of flavor and is easy to make. You’ll want to use a decent blender to make this soup creamy. Love my trusty Ninja. Received it as a Christmas gift and there are only few days that I haven’t used it since then. I’ll write a review on it soon, for those of you wondering if the Ninja Blender is worth the moola -spoiler alert: it is!
When my boyfriend brings this to work, he gets weird looks come lunch time. This soup is so vibrant and green! Really easy to take to work or school too, if you have a container that is a well-sealed leak-proof container, like a thermos. The only leak proof containers I have is a Thermos brand little container and a couple travel coffee mugs.
I really never get sick of this soup. I eat it hot and sometimes chilled. But, I have a thing for Mexican food and spicy food. And I am obsessed with adding sour cream to food whenever I can. Yes, some call me an opportunity seeker.. It's a nice go-to recipe when I've bought several avocados that get ripe at the same time.
This recipe calls for two ripened avocados, however sometimes I use just one and a half avocados blended into the soup, and I dice up the other half to sprinkle over the top. Bites of the little chunks of avocado with the soup is awesome- I really love the texture fo that. Needless to say, that's a delicious option as a topping.
Spicy Avocado Soup with Lime Recipe
- 3 Cups Broth
- 2 Medium Onions, Diced
- 3/4 Cup Frozen Corn
- 1/2 Cup Salsa Verde
- 1/4 Cup Cilantro, Diced
- 1/4 Cup Sour Cream
- 15 Hot Jalapeño Slices, Diced
- 1 Lime, Juiced
- 2 Tbsp Garlic, Minced
- 2 Medium Avocados, Ripened
- Hot Sauce (to taste, Optional)
- Olive Oil
- Grab large pot, cover bottom in a thin layer of oil. On medium head, cook diced onion with lid until translucent.
- Add garlic, jalapenos, salsa Verde, and corn and cook for 5-6 minutes on medium without lid.
- Add broth, cilantro and lime juice and simmer for 5 minutes. Take off heat and let cool for a few minutes.
- Pour contents of pot into blender, along with the avocado and sour cream. Blend until smooth.
- Pour back into pot and heat until desired serving temperature. Add hot sauce to taste.
