Spicy Black Bean Soup

This is my modified version of Food Networks Black Bean Instant Pot Soup. This is a delicious Latin-inspired soup, sure to keep you nice and warm with loads of flavor! Just add whatever toppings your little heart desires.

The recipe uses dry black beans which are inexpensive, and since you make this in the Instant Pot, it's relatively fast! Remove the sour cream and cheese if you prefer the Vegan version.

Have a delicious filling soup in less than 1.5 hours!

Ingredients

  • 8 cups water, 7 if you want it thicker
  • 5-6 garlic cloves, sliced
  • 2 tablespoons vegetable oil
  • 1 medium white onion, chopped
  • 1 teaspoon cayenne pepper
  • 3 teaspoons chili powder
  • 1 1/2 teaspoons oregano flakes
  • 1 1/2 teaspoons ground cumin
  • 2 1/2 cups dry black beans
  • 1 teaspoon bay leaves
  • 1 lime, cut into wedges
  • 1 bunch cilantro, chopped
  • 1 cup sour cream, add to your liking
  • 1 cup cheddar cheese, optional topping
  • Dash salt & pepper, to taste
  • 1 cup dorritos, smashed, optional
  • 1 avacado, sliced

Instructions

  1. Set your 6 quart Instant Pot to Saute Mode. Add 2 tablespoons vegetable oil. Saute onions for about 5 minutes
  2. Add your spices and garlic. Saute another minute or so
  3. Add the 2/12 cups of black beans and 8 cups of water
  4. Set the Instant Pot to high pressure mode for one hour. Now go relax for an hour.
  5. Manually quick release when the soup is done cooking.
  6. Remove a cup or so of the black beans. Set those aside.
  7. Use and imersion blender to puree the rest of the soup.
  8. Add back the black beans
  9. Place soup into a bowl, add toppings of your choice, chopped cilantro, sliced avacado, lime wedges, cheese, sour cream, crushed chips. ENJOY!

      I sometimes make supper at my parents' house using their instant pot. This looks like a really good recipe! I will have to try it sometime.
