  • 6 green chilies
  • 1 bunch coriander leaves
  • 1 bunch mint leaves
  • two and a half spoons yogurt
  • one and a half onions
  • 1 spoon ginger garlic paste
  • 1 cinnamon stick
  • 1 tablespoon mace strands
  • 1 tablsespoon cloves
  • 4 green cardamom
  • 1 tablespoon shah jeera
  • 3 bay leaves
  • 1 tablespoon coriander powder
  • 1 tablespoon cumin powder
  • 1 tablespoon red chili powder
  • 1 spoon gram flour
  • one and a half spoon biryani masala
  • 3 cups basmathi rice
  • half a cube butter

Tips

  1. Cook under medium heat.
  2. Cover the wok from step 2 through step 9. Mix the contents in the wok every 3 to 4 minutes from step 2 through step 7. This is to avoid the contents in the wok from sticking to its bottom.

Instructions on how to make biryani rice.

  1. Add 1 tablespoon of mace strands, whole garam masala (6 cloves, 1 cinnamon stick, 4 green cardamom), 3 bay leaves and 1 tablespoon of shah jeera in quick succession. Cook for about 4 minutes. You will know when its done when the spices emanate a sweet smell and the green cardamom swell.
  2. Add finely sliced onions and green chilies in quick succession. Add a spoon of salt. Mix thoroughly. Wait until the onions turn slightly brown. This will take about 10 minutes.
  3. Add 1 spoon of ginger garlic paste. Cook for about 4 minutes
  4. Add coriander leaves and mint leaves in quick succession. Cook for about 8 minutes.
  5. Add 3 spoons of yogurt. Cook for about 4 minutes.
  6. Add about 1 spoon of biryani masala powder. Cook for about 4 minutes.
  7. Add 6 cups of water (1 cup rice = 2 cups of water). Let the water come to a boil. The water should taste slightly salty.
  8. Drain water from the soaked biryani rice. Add the biryani rice to the already boiling water. Cook for about 15 minutes until the water disappears.
  9. Turn off the heat. Keep the wok covered for about 10 minutes on the kitchen counter. Mix the rice gently from the sides bottom up (do not start in the middle as it would break the rice).

  5. Keep flipping the eggs every 60 seconds. Saute the eggs for about 8 minutes.
  6. After 8 minutes, place the eggs on the biryani rice.
