  • one and a half onions
  • 2 tomatoes
  • one and a half spoon ginger garlic paste
  • frozen grated coconut
  • 2 spoons red chili powder
  • one and a half spoon coriander powder
  • 1 spoon fennel seeds
  • 1 spoon salt
  • coriander leaves
  • 6 spoons canola oil
  • 2 tablespoons turmeric powder
  • one and a half spoon pepper

Instructions on how to make the richly flavored tomato paste (this should be cooked under medium heat throughout)

  1. Put 3 spoons of oil in a wok. Allow the oil to heat up. This will take about 2 to 3 minutes.
  2. Add the onions and a spoon of salt. Mix the contents in the wok thoroughly. Cover the wok when cooking. Stir the contents every 2 to 3 minutes. Cook for about 8 minutes until the onions turn transparent.
  3. Add ginger garlic paste. Mix the contents in the wok thoroughly. Cook for about 4 minutes. Cover the wok when cooking. Stir the contents in the wok after 2 minutes.
  4. Add the sliced tomatoes. Mix the contents in the wok thoroughly. Cook for about 10 minutes. This is when the tomatoes turn squishy. Cover the wok when cooking. Stir the contents in the wok every 2 to 3 minutes to avoid the contents in the wok from sticking to the bottom of the wok.
  5. Add 2 table spoons of turmeric powder, 2 spoons of red chili powder, one and a half spoon of coriander powder and frozen grated coconut in quick succession. Mix the contents in the wok thoroughly. Cook for about 12 minutes. Cover the wok when cooking. Stir the contents in the wok every 3 to 4 minutes.
  6. Turn off the heat. Allow the contents in the wok to cool. After the contents in the wok cool, add the contents in the wok to blender and make a fine paste.

  7. Add finely sliced coriander leaves to the chicken just before turning off the stove and mix thoroughly.
