Spinach Beef Bake Recipe
Great and Filling!!
This is an easy casserole to prepare, a great tasting dish and a filling recipe at the same time. To me this would be a perfect Sunday dinner dish to make ahead of time and take to church. It can be made the day before and cooked the next day or it can be made ahead of time and frozen and simply thawed out when you are ready to prepare.
This is a one dish meal that is filling for sure. The interesting combinations of flavors will keep you coming back to this recipe for seconds.
I can almost guarantee if you take this dish to share, you will not bring any of it back home with you and then you will be required to "bring the recipe."
This spinach bake is a great recipe that makes a meal in and of itself. This is a good hearty recipe that includes several ingredients that you might not have on hand. They are common ingredients that you can find easily in the grocery store. This makes a great casserole and it will feed several adults. I would let this be a main dish and serve several side dishes with it or, it could be a meal in itself. With the ingredients including spinach and mushrooms, I do not think that kids would be a big fan of this dish.
From time to time, I like to try a different kind of recipe and when I saw this one, it caught my eye. You can either cook the ground beef with the onion or cook the onion by itself and then cook the ground beef until it is no longer pink. It would be my suggestion to drain the grease off the meat so that the dish will not be quite so greasy. The last thing that you want is greasy spinach.
I don't know if you like spinach or not but, if you do then, this is a great combination of beef and spinach. Spinach is a great healthy vegetable and one that you might not necessarily think to cook a lot of the time. It is very easy to prepare. Spinach and Beef Casserole
I use a glass casserole dish to make a prettier presentation. This is a pan that allows you to be able to see the casserole. This will make your friends just want to eat it more.
The pan that I am thinking of, has a lid and a carrying case. This makes it easy to carry from home to the office or to church for Sunday lunch. I always grease the pan before lining it with the biscuits. This will keep the biscuits from sticking to the bottom of the casserole dish. This is the base for the casserole. The following ingredients can be added at this point according to the directions.
You can use either frozen spinach or the fresh spinach. For this recipe, if I remember correctly, I used the frozen spinach. If you use frozen or canned spinach vs. fresh, the spinach is already cooked so, there's no guess work in whether the spinach gets done or not.
On the same note, you can use fresh mushrooms or canned mushrooms depending on how much you like mushrooms. I think the fresh mushrooms tend to have more flavor but, I usually have the pieces and stems in a can in the pantry. I would use these before I went out and bought fresh mushrooms.
I would never skimp on the cheese. I love cheese and if anything, I would add a little more cheese than what is recommended.

- 2 tubes (7 1/2oz) canned biscuits
- 1 1/2 cups ground beef, cooked
- 1/2 cup onion, white or Vidalia, chopped fine
- 2 eggs slightly beaten
- 1 package frozen spinach, thawed and chopped and squeezed dry
- 1 can (4oz) mushrooms, stems and pieces, drained
- 4oz. feta cheese, crumbled or shredded
- to taste Monterey jack cheese
- 1/4 cup parmesan cheese, grated
- 1 1/2 teaspoons garlic powder
- to taste salt and pepper
- 1/2 tablespoons butter, melted
- The first thing that you will want to do is press and flatten the biscuits onto the bottom and up the sides of a greased 11" x 7" x 2" deep baking dish and set it aside. In a skillet, over medium heat, cook the beef and the onion, until the meat is no longer pink. Then be sure to drain off the grease.
- In a medium to large separate bowl, beat the eggs. To the egg mixture, gently add the spinach and mushrooms; mix well. Now you can stir in the cheeses, garlic powder, salt, pepper and beef mixture. Mix the ingredients well, and then spoon into the prepared pan of your choice.
- Drizzle with the butter. Then bake in an uncovered, pan at 375 degrees for 25-30 minutes or until the crust is lightly browned.
