Delicious Strawberry Salad Recipe

Who can resist the sweet, sugary deliciousness of a ripe strawberry? Or the crispness of fresh romaine lettuce and the crunch of sugared almonds? Hmm... not me! And did I mention a fantastic dressing with a hint of raspberry and seeds? Here's a recipe that not only tastes great in the summer, but any time of the year! It's light, healthy, refreshing, and just so full of goodness. Great for lunch, a side dish, and to serve at parties. Give this tasty salad a try and let me know what you think! :)

Strawberry Almond Salad


1 bunch of romaine lettuce (washed and cut coarsely)

1 pint fresh strawberries(washed, stem removed, and halved)

1/2 medium red onion (sliced thin)

sugared almonds (recipe below)

Sugared Almonds:

1/2 cup slivered almonds

2 tablespoons butter

1/3 cup granulated sugar

Salad Dressing:


3/4 cup light mayonnaise

1/4 cup milk

2 tbsp poppy seeds

2 tbsp raspberry vinegar

1/3 cup granulated sugar

Preparation:

Prepare sugared almonds: In a saucepan over medium heat, melt 2 tablespoons butter. Then add almonds and 1/3 cup sugar. Sauté almonds until golden brown.

In a salad bowl, combine; romaine lettuce, strawberries, red onion, and the sugared almonds. Mix salad dressing ingredients together in a small mixing bowl, then toss with salad. Chill strawberry salad briefly in the refrigerator, then serve.

      This looks healthy. Gotta try. Do you have any recipes that you use splenda. I usually make a mess when substituting with splenda.
