Strawberry Shrub with Light Rum

Kitchenware Required

  • vegetable peeler
  • dutch oven
  • spoon
  • fine-mesh sieve
  • punch bowl
  • punch cups (or small glasses)


  • 2 cups sparkling wine
  • (1) 8-ounce package frozen whole strawberries, (unsweetened)
  • 1/2 cup honey
  • 1 lemon
  • 1/2 cup granulated sugar
  • 3 tablespoons water
  • 1 1/2 cups ice cubes
  • 1 ounce light rum
  • (2) 3-inch cinnamon sticks
  • 1/4 teaspoon whole cloves
  • 1/4 cup snipped fresh sage, (optional)


  1. First you will be preparing a syrup. Use your vegetable peeler to remove the peel from the lemon in strips. Set the peel strips, and lemon to the side. Put the frozen strawberries, honey, sugar, and 3 tablespoons of water into a dutch oven, and stir to combine. Cook while stirring occasionally just until the sugar has dissolved. Squeeze the juice from your lemon into the dutch oven, and stir to combine. Add the reserved lemon peel strips, cinnamon sticks, sage and cloves to the mixture. Stir occasionally while bringing the mixture just to a boil. Remove the dutch oven from heat, cover it, and set aside to cool at room temperature for about 2 hours. Once cooled, press the mixture (in batches) through a fine-mesh sieve, and discard the solids. You should be left with about 2 cups of syrup.
  2. Now your ready to prepare and serve your Strawberry Shrub cocktails. Pour the syrup into a punch bowl. Add the light rum and your ice cubes. Stir to combine. While lightly stirring, slowly add the sparkling wine. Serve the drinks in punch cups or small glasses.
