Do you CRAVE pancakes? Usually I get pancake cravings at the strangest times – usually after midnight! There's a good reason those pancake restaurants are open all night!
A long time ago I found out the secret to making absolutely perfect strawberry or blueberry pancakes at home, so I didn't have to wait until we went out. If I have fresh or frozen fruit available, I add it in.
I learned this completely by accident, when I had waited too long to go to the grocery store and the cupboards were bare! It was time to feed hungry people, and the only thing I could find in abundance was muffin mix, bacon and eggs. I figured, "Why not?" I added milk to the muffin mix until it was the consistency of pancake batter and crossed my fingers. They were the most perfect pancakes I'd ever made! In fact, they're so good, I still make pancakes with muffin mix to this day, in lots of different flavors! One of my favorites is orange muffins with choocolate chips, which is a lot more like dessert than breakfast!

It Could Only Happen To A Newlywed!
Way back over 30 years ago, long ago in a land far away (Kansas!), we were a brand new married couple living on just an Army monthly paycheck in a tiny apartment. It was almost the end of the month, and the groceries were just about gone. We had a nice box of pancake mix, though! It was the kind where you added egg and milk.
Well, first we ran out of eggs, then milk, then butter to coat the fry pan... we finally got down to pancake mix with water, fried on really low heat and scraped out of the pan in pieces. Ahh, young love is bliss... but it sure can be hungry!
