Just A Few Good Summer Desserts
Summer is coming and it is time to grill and hang out with family and friends and have some good desserts. Ice cream is just exquisite.My grandma all ways said If you get melted chocolate all over your hands, you're eating it too slowly. You can make desserts healthy or full of goodness that is not so healthy for you but so worth the indulgent and finger licking good.I hope you can enjoy these few recipes with your family and friends.
Ice Cream Cake
What you need:
. Ice cream sandwich's(1 box of twelve or two box's for a bigger cake)
. tub favorite ice cream flavour
.1 tub whipping cream
.magic shell caramel
.magic shell chocolate
.Toppings of choice
First i unwrap the ice cream bars.Layer the bars with adding ice cream in between to hold the sandwiches together this provides like a glue to hold each layer together. Each layer i put the ice cream bars in opposite directions on each layer so it stacks better.After you have made all your layers,spread whip cream on the top and sides of your layered ice cream cake.After you have covered the ice cream cake in whip cream drizzle the magic shell chocolate and caramel all over the top and sides. Finally you can add all the topping you want if you desire like your favorite candy bar all crumbled up ,nuts,cookies broken in to pieces or sprinkles.The more you add just remember the richer the cake will be to eat.Once you have decorated the cake place it in the freezer for 20 minutes to make sure it freezers together so it will be easier to cut.You can make it the night before just make sure you take it out 10 minutes before hand to soften up a little so you can cut it.Enjoy!!!
Mocha Cheesecake Bars
This deliciousness filled coffee flavor cheesecake bars with a Oreo cookie crust and hot fudge,topped with a gelatin based filling of cream cheese,sour cream,coffee and chocolate
what you need:
.30 Oreo cookies
.1/4 cup hot fudge topping,not heated
.1 envelop unflavoured gelatin
.1/2 cup cold strong coffee
.2 8 oz blocks of cream cheese room temperature
.3/4 cup sugar
.1 cup sour cream
.1 bar of bittersweet chocolate bar broken up
. Shaved chocolate or chocolate coffee beans for garnish
1.You will need a 13 x 9 inch pan lined with nonstick foil long enough to over lap the small sides of the pan
2.place the cookies in a bag and smash into pieces or pulse in a food processes until fine crumbs.Add the fudge topping to the crumbs to moisten the crumbs then press firmly in the pan.Put the pan in the freezer while working on the filling.
3.sprinkle the gelatin in the pan over the coffee in a pan let stand for a few minutes.Stir over low heat until steaming and granules dissolve then remove from heat.
4.Beat cream cheese and sugar in a large bowl until smooth.Mix the the sour cream in with the coffee mixture slowly and then add the chocolate and blend slowly until well blended.
5.pour into the crust,cover and refrigerate 4 hours or until firm.
6.Lift the foil by the ends onto a cutting board.Cut crosswise into 8 strips then each strip in to 6 bars.Add the garnish to each bar and enjoy.
Sugar Cookie Crust Pizza
Sugar cookie ingredients:
.2/3 cup butter flavor shortening
.1 cup sugar
.2 eggs at room temperture
.1/3 cup milk
.1 tsp vanilla
.3 cup all purpose flour
.2 tsp baking powder
.1 tsp salt
1. preheat the oven to 350 degrees
2.cream the shortening and the sugar together well.Know add the eggs,milk and vanilla and mix together.
3.In another bowl sift together the flour,baking soda and salt.
4.In small dozes add the dry ingredients to the wet ingredients mix together until you form a dough ball.
5.On floured surface roll out the dough to about 1/2 inch thick.Place the dough on a greased pizza pan.
6.Bake about 10-12 minutes.
For best results make sure the dough is completely cooled down before adding the toppings.
.8 oz cream cheese at room temperature
.1/3 cup sugar
.1 tsp vanilla
.2 cups of fresh fruit washed,peeled and sliced strawberry's, blueberry's, raspberry's,grapes,kiwi,pineapple or peaches.
.1/2 cup apple jelly
.2 tbsp concentrate orange juice
1.In a small bowl beat the cream cheese,sugar and vanilla together until fluffy.
2.spread mixture over the cooled crust evenly.Arrange the fruit over the cream cheese .
3.Add the apple jelly and the orange juice to a pan and put over low heat and stir until the jelly melt.
4.Spoon or brush the glaze over the fruit evenly refrigerate until chilled about an hour. Then cut with a pizza slicer and serve.
Fresh Fruit Salad With Creamy Custard
What you need:
.6 kiwis peeled and chopped
.2 mango's peeled,cored and sliced up
.1 melon peeled,seeds removed and chopped up
.1 quart strawberry's cut in to quarters
.1 quart blueberries
.1 1/2 cups whole milk
.6 large eggs
.2/3 cups sugar
.1 tsp vanilla
.2 tbsp butter
1.For the custard, in a medium saucepan (preferably one with a lip for pouring), heat milk until steaming.
2.In a medium bowl, whisk together the egg yolks and sugar until combined. Whisking constantly, slowly incorporate the hot milk into the egg mixture. Return the mixture to the saucepan.
3.Heat the custard over low heat about 5 minutes or until thickened slightly, stirring constantly. (It should be thick enough to coat the back of a spoon. Do not let the mixture come to a simmer or the eggs will curdle.) Immediately strain the custard into a small bowl. Stir in the vanilla, then stir in the butter until melted.
4.Serve fruit with the warm or chilled custard on the side, letting guests spoon the custard over the fruit as desired.
Home Made Sorbet
The fun of sorbets is it is just frozen water or juice sweetened with fruit, chocolate, liqueur, wine, or even fresh herbs. Unlike sherbet and ice cream, sorbet typically contains no dairy, making many of these recipes a good choice for anyone who is lactose intolerant or vegan. From fruity strawberry sorbet to decadent chocolate sorbet, find the perfect recipe to satisfy your cravings for a frozen treat.One of my favorites is orange sorbet.
What you need:
- 10 medium oranges
- 2 1/2 cups water
- 1 cup sugar
- 1/3 cup fresh lemon juice (about 2 medium)
- Grated orange rind (optional)
- Mint sprigs (optional)
- Carefully remove rind from 2 oranges using a vegetable peeler; discard white pith. Cut rind into 1 x ¼-inch-thick strips. Cut peeled oranges in half; use a citrus reamer to squeeze juice from orange halves. Repeat with remaining oranges until juice measures 2 2/3 cups.
- Combine 2 1/2 cups water and sugar in a small saucepan; bring to a boil. Add rind strips to pan. Reduce heat; simmer for 5 minutes. Strain sugar mixture through a sieve over a bowl, reserving liquid; discard solids. Cool completely.
- Add orange juice and lemon juice to sugar mixture; stir well. Pour mixture into the freezer can of a tabletop ice-cream freezer; freeze according to manufacturer's instructions. Spoon sorbet into a freezer-safe container; cover and freeze for 1 hour or until firm. Garnish with grated rind and mint sprigs, if desired.
