Sumptuous Strawberry Dessert Recipes

May is a time I begin to think about Strawberries! Since we have a Strawberry festival up this way it is no wonder I begin to think about Strawberry treats! These luscious fruits have a lot of potential and are served up in a lot of recipes. Strawberries are a great source of Vitamin C, Vitamin B5 and Vitamin K. Strawberries are also full of antioxidants. A study suggests that strawberries are the third in antioxidant capacity. No crust strawberry pie

If you are looking for a light strawberry treat? The No Crust Strawberry Pie has 58 calories per serving. All you need is

  • 3 cups of strawberries
  • 1 package of cook and serve vanilla pudding powder mix
  • 1 package of sugar free strawberry flavored gelatin mix
  • 2 cups of water

Place hulled strawberries in a ten inch pie pan. Mix pudding mix,gelatin mix and water in a sauce pan and bring to a boil. Pour over strawberries and refrigerate for four hours. Top with sugar free cool whip!

Berry Truffle Pie

This pie has strawberries, blackberries and blueberries! There is even chocolate! You don't want to know the calories, really! The ingredients are the following:

  • pie crust
  • 1 cup mixed berries
  • 1 tablespoon butter
  • 1 cup semi sweet chocolate pieces
  • 1 8oz cream cheese
  • 1 whole quart strawberries
  • 1/4 cup of sifted powdered sugar
  • 2 tablespoons of red currant jelly
  • 1/2 teaspoon of orange peel

Bake the pie shell. Then take the butter and the chocolate chips and melt them in a sauce pan. Add the cream cheese. After melted take form heat and add powdered sugar. Pour into the cooked pie shell. Arrange berries with the stem side down over the chocolate. Melt the jelly and pour over the berries and chill for four hours! Yum!

Here's an easy to make strawberry pie brought to you by none other than Martha Stewart. This strawberry pie is cooked just a little to let out some of the strawberry flavor.

The ingredients are

  • Ten graham crackers
  • 1/ 4 cup of cornstarch
  • I cup of sugar
  • ΒΌ teaspoon of salt
  • 2 qts of strawberries
  • 1/2 Cup of heavy Cream
  • 1/2 cup of Unsweetened Cranberry Juice

Blend 2 tablespoons of sugar with finely chopped up graham crackers. Add butter and flatten the crust to a pie plate. bake until slightly brown. Let it cool.

In Saucepan combine 2 cups of strawberries, 1/2 cup of cranberry juice , 3/4 cup sugar, cornstarch and salt. Mash strawberries. Bring to a boil and cook until thick for one minute. Remove from heat and let it cool a bit. Pour in the rest of the strawberries.

Pour it into the pie crust and refrigerate for about four hours.

In another bowl beat the heavy cream and add powered sugar. Continue mixing until peaks form. Put the cream over the pie and enjoy!

Chocolate covered Strawberries

Do you like Strawberries? Do you love chocolate? The combination of the two is irresistible! And even more appealing is the fact that this is EASY to do! First you want to clean your strawberries and pat dry. Take a package of semi sweet chocolate chips and melt them in the Microwave. Be careful not to overcook them. Only do about 30 seconds at a time until the chocolate is completely melted. Set out a piece of wax paper. Take the strawberries by the stem and dip them into the chocolate. Let the chocolate drip off and them set them on the wax paper. Let them cool! If you want to get a little fancier melt white chocolate chips and take a knife and drizzle it back and forth on the strawberry. See? Easy to make Gourmet strawberries!

Got some chocolate left over? If you have Pretzels chocolate goes great over pretzels!

Strawberry Smoothie

Another awesome combination is strawberries and ice cream! What does that make? A sumptuous strawberry smoothie! You just need 1/2 cup of strawberries fresh or frozen,1 cup of vanilla ice cream,2/3 cup of natural yogurt, 1/2 cup milk ans 3 tablespoons sugar. Put the strawberries, yogurt and sugar into the blender and blend until smooth. Pour into tall glasses only filling it halfway up. Take care to clean out the blender for the next step. Next put in the the vanilla ice cream and milk in the blender and blend until foamy. Pour this on top of the strawberry yogurt mixture! You now have an attractive Strawberry Smoothie! Be sure to decorate with an extra strawberry or two.
