Pulled Pork on Buns, with Potato Skins and Coleslaw
This is like a weekend supper, we pretty much eat it all weekend with different variations. I hope you enjoy it!
Place a pork roast into a slow cooker, pour 1 bottle of BBQ sauce over and about the same amount of rootbeer over, cut 1 onion and 4 cloves of garlic and put those in as well. Cook on low for 6-8 hours. Take out the pork and pull until it is all stringy and pulled apart, then put it back.
Now take some potato skins, ( I keep my potato skins in the fridge in which I peeled from a previous supper and I place them in some water with a bit of vinegar or lemon juice, this is too keep from browning) Drain and deep fry, when nice and brown place on coffee filters to drain. Shake on a little seasoning salt.
Coleslaw- you could make this while the pork is cooking. I just by the mixture of coleslaw greens, I make my own dressing sometimes and it is just, salad or mayo, pickle juice, black pepper, salt and if you have poppy seeds. ( pieces of apple are also a nice addition)
Buns or dinner rolls- (If you don't make your own hamburger buns work well). You could make these while the pork is cooking. These take about an hour in total to make.
2 and 1/2 cup of flour,2 tbsp of butter, 2 tbsp of sugar , 1 pkg of quick rise yeast, 1/2 tsp of salt 3/4 cup of warm water.
Combine just 1 cup of flour sugar yeast, salt, add water and 2 tbsps of butter. Mix for 3 minutes on medium speed. Stir in remaining flour. Turn onto a lightly flour surface and knead until smooth and elastically about 4-6 minutes. You may need to add a little more flour to get the smoothness. Cover and let rise for 10 minutes. Divide into 12 pieces and shape each into a ball. place into a 9 inch greased round pan, cover and let rise until double in size about 30 minutes. Bake at 375 degrees for 11-14 minutes or until browned. Brush with butter.
Put the pulled pork on the buns, many people put the coleslaw on the buns too, serve with the potato skins on the side. I use ranch for dipping sauce. Add a pickle on the plate too. Yum!
