Sweet Potato Cake Ingredients


1 sweet potato diced into equally shaped cubes

1 can of red kidney beans (400g)

Sunflower oil

Cook Time

Prep time: 10 min
Cook time: 20 min
Ready in: 30 min
Yields: serves 2 people

Add paste (optional)


Sweet Potato Cake

  1. Put the sweet potato chunks in the microwave for about 8 minutes or until their tender and can be pierced with a fork. Make sure to keep checking them and shuffling them about so that they are all ready at the same time. (The ones around the edge cook faster than the ones in the middle)
  2. Rinse the kidney beans and drain them
  3. Once the sweet potato is ready start to mash them and add the kidney beans. You can mash them as thoroughly as you like. In this recipe I added 1 table spoon of chipotle paste which gives it a more smokey flavour however I have done this recipe before without adding the paste.
  4. Divide the mash into 4 and shape them into cakes
  5. Add a generous amount of oil into a non stick frying pan and fry the bean cakes on low heat for up to 5 minutes on both sides
