My Taco Night
We love tacos! I mean who doesn't really? So I went to the store and I bought some meat for carne asada tacos and stuck it in the freezer for another night. Yesterday I took that meat out of the freezer and got everyone excited for taco night! Then I went to marinate the meat.... no lime juice.... no lemons..... no nothing! Then i realized i didn't even have taco sauce or cheese or avocados or cilantro! "How am I supposed to have taco night?!" I thought. I couldn't back out now! Everyone was so excited already! So I decided to improvise. I improvise a lot actually. My husband always makes jokes because he says I can never follow a recipe.
So I started rummaging around my cabinets and spices. What did I find? Well the taco classic, Cumin. And some Mrs. Dash Citrus spice! Then I found 2 jars of salsa!
I thought to myself, well, you do marinate the meat in a citrus flavor marinade? I decided to try a dry rub of the 2 spices and some salt! I took out my favorite cast Iron skillet and cooked up some onions and garlic, then tossed the meat right on top of it on medium high heat.
The result was pretty good. But not what I wanted of course. So I sliced up the meat into strips, then I took a little bit of both salsas and tossed them in my skillet, then I tossed the meat in and cooked until just warm. The result? AMAZING!
So here I was with some delicious taco meat. No toppings.... well then I found some sour cream! Yay! Let me tell you, these tacos were so delish that my husband never knew I had to go on such an adventure just to make taco night happen! Even my kids scarfed them down with no complaints! (a miracle in itself). So I learned that tacos can come together even when you have next to nothing! Happy taco making everyone!
