Taco Skillet Recipe

Mom's cooking has always been one of my favorite memories growing up. I was always astonished on how my mother could come up with interesting recipes. One of my all time favorite creations that I still love to this day, is my mom's taco skillet. There are many ways of making taco skillet but I feel my mom has found the right combination of spice and seasoning, that makes your mouth water and want more! I encourage all of my readers to try my mother's recipe out, its easy to make and I promise you and your family will love it.

Ingredients

1 pound of ground beef or turkey

1 cup of diced mushrooms

1 stalk of celery thinly chopped

1 small onion diced

½ green pepper diced

1 can of your favorite brand of corn

1 can of diced tomatoes with mild green chilies

1 package of taco seasoning of your choice

Olive oil just enough to sauté celery, onions, pepper and mushrooms


Directions

Step 1: Dice celery, onion, pepper, and mushrooms.

Step2: In a medium or large fry pan saute diced vegetables in olive oil.

Step 3: Cook until vegetables are soft and browned.

Step 4: Once vegetables are browned, add 1 pound of ground beef or turkey.

Step 5: Cook meat thoroughly, or until meat looks crumbled.

Step 6: Drain any grease from meat.

Step 7: Add taco seasoning, with can of drained corn and can of drained tomatoes with chilies.

Step 8: Stir and let simmer for about 10 minutes, making sure not to overcook.

Step 9: Serve taco skillet with cottage cheese on the side with your favorite beverage.

Your taco skillet can have grated cheese sprinkled on meat and vegetables as well as taco chips mixed in, to create a spicy and yummy dinner the whole family can enjoy!

      The recipe sounds delicious.. the one thing that caught my attention was serving with Cottage Cheese... I guess I would have never thought of pairing a taco dish with Cottage cheese. Interesting. Can't wait to try this... will put it on the meal plan next week! :)
