Red and Green Chiles

The actual difference between red and green chiles is in the preparation:

For green chile sauce-The unripe, green peppers are roasted and then chopped. They're cooked with onion and garlic, simmered in broth, thickened with a little flour and then pureed into sauce. Green chile sauce can be used in or with scrambled eggs, tortillas, polenta, pulled pork and chicken enchilada casserole.

For red chile sauce-The peppers are allowed to ripen (or turn red), and are then dried. At this stage, they're then called ancho chile peppers. The sauce is made by rehydrating the peppers and pureeing them with seasonings. Red chile sauce can be used over or in enchiladas, pinto beans, pulled pork, posole, huevos rancheros and chile rellenos.

New research has uncovered another reason why it's a good thing to eat as many veggies as possible; it turns out that zeaxanthin, a nutrient found in bright-colored fruits and vegetables, increases the speed at which our brain and eyes communicate (consuming 20 mg daily-like a cup of cooked spinach, for example-sped up visual processing by 20 percent after four months).

Since Pumpkin Spice Lattes were launched by Starbucks in 2003, the number of calories consumed so far now total over 60 billion (!).

Blue Diamond Bold Sriracha Flavored Almonds are one of the latest products that feature the world-renowned spicy sauce (a single serving of 28 is only 170 calories!). It's widely available at most major retailers.

Burrata Cheese is a fairly new ingredient that's similar to fresh mozzarella;it's made by heating and stretching mozzarella into a ball, filling it with cream and bits of cheese. When aged, the ball's center turns into a creamy filling, with a texture like ricotta. Burrata can be used on pizza or mixed with pasta, basil and fresh tomatoes.

Tzatziki (pronounced Za-Dzee-Kee) is a creamy Greek sauce, blended with cucumber, garlic and yogurt; it can be used as a topping for grilled meat, a vegetable dip, or thinned out with water for a salad dressing.

Purely Simple is a new line of baking and frosting mixes from Pillsbury. There are no preservatives or artificial flavors or colors and they're as easy to make as the regular mixes. The cake, brownie and frosting mixes retail for $3.29; the frosting, for $1.99.

If you're planning to get in some early fall grilling (before you have to put it away) and have steak cravings, there are now apps for that; iGrill and Grill It will guide you to the perfect temperature based on variables like the cut and thickness.

Did You Know That.....

Regular yellow mustard can be mixed with: Mayonnaise and lemon juice for a creamy taste; apricot jam and dried basil for a sweet taste; and with prepared horseradish and onion powder for hot. And for another delicious, hot taste, mustard can also mixed with a few jalapeno peppers (or there's already prepared jalapeno mustard that's available in most major stores and supermarkets).

A dash of Worcestershire sauce can also be added to pasta sauce, scrambled eggs, chili and vinaigrette.
