Texas Easy Chili
In this recipe for Texas Easy Chili we are going to use 3 pounds of beef chuck roast cut up into small one inch square pieces. This was the traditional way that chili was started out on the cattle trail by the chuck wagon cooks. The best way to cook your cubed chuck roast is to add the cubed chuck roast to a large skillet that you have added cooking oil to and you want to start it cooking on medium heat. Cook it slow being sure to stir your meat often so that it gets well browned but not over cooked on all sides. You get your meat brown before you add it to a stock pot or dutch oven so you can add in your other chili ingredients.
Texas Easy Chili Ingredients
1. Three Pounds Of Beef Chuck Roast Cubed Into One Inch Cubes And Well Browned.
2. Two Tablespoons Raw Minced Garlic.
3. Six Tablespoons Chili Powder.
4. Four Tablespoons All Purpose Plain Flour.
5. One Tablespoon Dried Powdered Oregano.
6. One Teaspoon Dried Powdered Cumin.
7. Three Cups V8 Tomato Juice.
8. Three Cups Beef Broth.
9. One Teaspoon Ground Sea Salt.
10. One Teaspoon Ground Black Pepper.
While your cooking and browning your beef you'll want to stir in the garlic once you have the beef browned on all sides and let it cook for a few minutes before you pour all the contents of the pan out into a stock pot or dutch oven.
Now add about a tablespoon of vegetable oil to the pan where you cooked the beef and add your spices and flour to the pan. Cook stirring all the spices and flour together. Once you have the flour browned pour your beef broth out into the pan and stir briskly with the wire whisk to mix it all up well. Then pour it out into the stock pot or dutch oven.
Now add the V8 tomato juice to the stock pot and bring the pot almost up to a boil but not quite. Reduce the heat to a simmer and cook at least two hours or longer until the beef is tender. If your Texas Easy Chili gets to thick add a cup of beef broth at a time. You don't want your chili to be thin. Texas Jail House Chili
Let me talk to you just a few minutes about this recipe. If you need a recipe for a delicious chili that is going to make a lot of chili here is the perfect recipe. Chili is quite often served in the Texas Prison System and in Texas Jails.
If you want one of the best recipes for Texas Jail House Chili then here it is. Its a bold full flavored chili and its a true Texas Chili again with no beans. This chili is usually made and served with big squares of corn bread. Most of the time sour cream, sliced jalapenos, diced sweet onion, shredded cheese, and other sides were served with this chili on the side. I am including the full recipe here but you can cut it down and make as much of the chili as you need. The full recipe makes a lot of chili and you will need a very large stock pot or two to cook it in.
Once you make this chili you need to place it into a cooler or refrigerator to let the chili get cold and then you will want to take a large cooks spoon and remove all the red grease that will congeal on top of the chili. Like the chili above this chili will always be better the second day or even after three days in the refrigerator or cooler. Remove the grease that will be red and will congeal on top of the chili over night. Then heat your Texas Jail House Chili up and serve it.
For Your Texas Jail House Chili You Will Need.
1. 25 Pounds Of Lean Ground Beef.
2. One Half Pound Of Ground Cumin.
3. One Fourth Pound Of Chili Powder.
4. One Eighth Pound Of Paprika.
5. Two Handfuls Dried Red Chili Peppers.( Remove The Stems )
6. One Half Pound Raw Minced Garlic.
7. One Pound Sweet Onion Chopped Fine.
8. Four Twenty Eight Ounce Cans Diced Tomatoes.
9. Twenty Four Ounces Tomato Paste.
You will want to start by browning all your meat in a large skillet until it is all brown. Drain each skillet of browned beef as you brown it before you add the browned beef to the large stock pot. Once you have all your beef browned and add it to the stock pot use your skillet and saute your onion and garlic together until it is tender.
Now add your onion and garlic to the stock pot and add all the rest of your ingredients to the stock pot. If you don't have a large enough stock pot you may want to use two stock pots. Add all the rest of your ingredients to the stock pot and bring almost to a boil but not quite. Reduce the heat to a low simmer and cook at least four hours until the chili is cooked down and thickened.
For this recipe to be really good you want to refrigerate it at least over night and remove all the grease that will form on top of your chili. Then heat up your chili and serve.

For Your Texas Green Pepper Chili You Will Need
1. Four Pounds Lean Ground Beef.
2. Two Cups Sweet Onion Diced Fine.
3. Two Cups Green Bell Pepper Diced Fine.
4. One Cup Red Bell Pepper Diced Fine.
5. One Fourth Cup Chili Powder.
6. Six Cups Red Canned Kidney Beans. , ( Wash And Drain Your Beans )
7. Two Cups White Canned Kidney Beans.( Wash And Drain Your Beans )
8. Four Tablespoons Minced Fresh Garlic.
9. Two Twenty Eight Ounce Cans Diced Tomatoes.
10. One Tablespoon Ground Sea Salt.
11. Six Cups Beef Broth.
12. Eighteen Ounces Of Tomato Paste.
Start off by browning your hamburger in a large skillet and add your peppers, garlic, and onion to your meat and cook it all up together until the meat is brown and the veggies are done. Drain the hamburger mixture well and add the contents of the skillet to a stock pot.
Add the remainder of your ingredients to the stock pot and bring the contents of the stock pot to a boil. Then turn down your heat to a low medium and cook for at least two hours or until your liquid had reduced and your chili has thickened.
This is a rich delicious chili and served over white rice with shredded cheddar cheese it is truly one of the most delicious chili's that I have ever tasted.
