BBQ Recipe - How To Make Spicy Grilled Chicken Thai Style

If you have ever been to Thailand, you will already know that BBQ chicken is a huge part of most Thai people's diet. It seems like wherever you go in Thailand there is always a vendor selling BBQ chicken nearby. Many of these roadside BBQ stands have a more spicy variety of grilled chicken that is absolutely delicious. Typically this will be served along with papaya salad and sticky rice. Thai people normally eat in a group and share several dishes, in a picnic style setting. It is common to see vendors selling grilled chicken at temples, outside bars, at the beach or just on the side of the road. It doesn't seem to matter where you go in Thailand, there will always be a BBQ chicken vendor in the area.

How To Make BBQ Chicken
Grilling chicken is much different than grilling steaks and other red meat. You do not want to use a hot grill, you want to cook the chicken slowly over a low heat source. This will ensure that the meat is fully cooked without drying it out. Thai people normally never use chicken breasts for grilling, because they find that the legs and thighs are much more flavourful. If you are on a diet I recommend that you use skinless breasts or legs.


1 KG of fresh chicken legs
2 tablespoons of chopped garlic
1 tablespoon of sesame oil
1 tablespoon of fish sauce
1 tablespoon of black pepper
1/2 tablespoon of salt
6 Thai chili peppers chopped
1/3 cup of BBQ sauce
1 tablespoon of soya sauce
2 tablespoons of oyster sauce
1 tablespoon of dried Thai chili powder
2 tablespoons of brown sugar

Cooking Instructions:

1: Combine ingredients in a large bowl, marinate the chicken for several hours

2: Grill the chicken at low heat

3: Baste the chicken with remaining marinate while grilling

4: Serve with sticky rice and papaya salad
