Thanksgiving Sweet Potato Recipe

If you’re looking to add a bit more flavor to your sweet potatoes this Thanksgiving, this sweet potato recipe is just the thing. The orange juice and cinnamon combine to give this dish a delicious aroma and unique flavor.

2 cans sweet potatoes (15-ounce size)
1/4 cup orange juice
3/4 cup flour
1/2 cup sugar
2 teaspoons cinnamon
1/4 teaspoon salt
1/2 cup butter
1 1/2 cups miniature marshmallows

Put the sweet potatoes in a large baking dish (10-inch x 6-inch). Pour the orange juice over them evenly. In a small bowl, combine the flour, sugar, cinnamon, salt and butter with a fork or pastry blender until it becomes fine crumbs. Put this mixture over the sweet potatoes. Bake in a 350 degree oven for 30 minutes. Add the miniature marshmallows and broil on a low setting for a few minutes until the marshmallows are golden brown.

Tips: If you like orange juice, add a few tablespoons of orange juice concentrate to the orange juice.

Watch the dish carefully as you brown the marshmallows. They can easily turn black and burn. If they do burn, try to carefully lift the burnt marshmallows off of the sweet potato mixture and try again with more marshmallows.
