Healthy Chocolate Dessert:The Best Chocolate Zucchini Cake Ever

After much digging in the family recipe bin, I found one of my childhood favorites! My mom used this recipe to help us eat vegetables when we went through the no-icky-green-things phase. It is super delicious, healthier than the average chocolate cake, and is easy to make! And it's been kid tested for taste!

  • 1/2 Cup Butter
  • 1/2 Cup Oil
  • 1 3/4 Cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla
  • 1 tsp Baking Soda
  • 1/2 tsp Cinnamon
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 2 Cups Shredded Zucchini
  • 1/2 Cup Tangy Milk***, (Mix 1/2Tbsp Lemon juice to the milk and let it sit for 5 minutes)
  • 4 Tbsp Cocoa
  • 2 Cups Flour


  1. Preheat oven to 325.
  2. Combine butter, oil, and sugar.
  3. Add eggs one at a time, and vanilla. Beat on med/high until smooth.
  4. Add dry ingredients and milk alternating.
  5. Mix in zucchini.
  6. Bake for 40-45 minutes.
  7. Add powdered sugar or a glaze on top when cool.

      Goodness I forgot all sorts of things when I posted this. I am so sorry!

      It takes 2 cups of flour!!! I just doubled checked everything and this should be correct. It really is yummy, I'm sorry you had a bad run with it.

      This has no flour in it? Is it supposed to because I made this and it turned out all kinds of wrong, we would love to try it again, just wanted to check on the flour! Thanks!

      I love my zucchini chocolate bread recipe. This one looks good too. I'll have to give it a try. If you call it bread, you can eat for breakfast :)
