     Guacamole has never been my favorite Mexican appetizer, maybe it was the color that turned me off (Shrek Green) or maybe I didn’t know what the heck an avocado really was either way every time I seen it I cringed. It wasn’t until a trip to the Moon Palace Resort in Cancun Mexico that I even had the thought of ever trying it. Years later my wife and I were eating at Chipotle and she ordered the guacamole because it was advertised as being made fresh daily. I decided to give it a whirl with their hint of lime and sea salt chips and it was actually not too bad. A few weeks later I went to the store thinking I could make my own so I bought a few avocados and a pre packaged guacamole dip packet and off I was to make the world’s best guacamole. This stuff was terrible, so back to never eating guacamole again. Ok, I don’t quit that easy one more try, I began to search Google for an authentic guacamole recipe for Chipotle style guacamole dip and I found several, so I went to work in the test kitchen and what I came up with surprised the heck out of me and everyone who has tried it since. I even like guacamole now, so below I am going to share my best guacamole recipe with you to enjoy, I hope you like it, I think you will.

     If you want to make the best guacamole then you need the freshest of ingredients, so lets begin, this guacamole recipe calls for fresh avocados, jalapeno peppers, red onion, fresh cilantro, fresh lime juice, salt and pepper. Don’t get intimidated by all the fresh ingredients it’s really a simple and fairly quick guacamole recipe to make.

    This recipe is for a 1 to 2 person portion size, for 4 people you should double, and if you are serving at a party or get together you may just want to hi-jack an avocado truck, please do not actually hi- jack an avocado truck! That was meant to be a joke like; you will need a lot of avocados to make that much guacamole dip. 

• 2 fresh avocados
• 1/4^th red onion finely chopped
• ½ lime juiced
• 10 pickled jalapeno rings or ½ of a fresh one seeded and diced small
• 2 tablespoons of fresh finely chopped cilantro
• 1/4^th teaspoon salt
• 3 to 5 turns of fresh ground pepper

First you will want to prepare all of your ingredients so go ahead and dice up your red onion, jalapeno peppers, cut your lime in half and peel your avocados. Next in a medium to large mixing bowl add all of your ingredients to the bowl and begin to mash using the back of a spoon or a smasher. Mash it to your liking, some people like their guacamole chunky and some don’t, it’s totally up to your tastes. Salt, pepper, lime juice and onion can all be adjusted to find the combination that works best for you.

 Well there you have it an easy, authentic recipe for guacamole. This simple and fresh vegetarian friendly avocado dip is great for any occasion.
