Ingredients For The Worlds Best Meatballs.
1. 2 Pounds Bulk Italian Sausage.
2. 2 Pounds Hamburger Meat.
3. 1/2 Cup Sweet Onion Diced Very Fine.
4. 1/2 Cup Red Bell Pepper Diced Very Fine.
5. 1/2 Cup Green Bell Pepper Diced Very Fine.
6. Three Tablespoons Minced Fresh Garlic.
7. Four Large Eggs.
8. Four Cups Fine Italian Bread Crumbs.
9. 1 1/3 Cup Parmesan Reggiano Cheese Fine Grated.
10. 1 1/2 Cup Red Wine.
11. 1 Level Teaspoon Ground Cayenne Pepper.
12. 1 Heaping Teaspoon Ground Sea Salt.
13. 1 Heaping Teaspoon Ground Black Pepper.
14. 2 Tablespoons Dry Italian Seasoning.
Start off by beating your eggs very well and add to a large bowl. Now mix in all the ingredients but the wine and start to mix together very well with your hands. Once you start getting it mixed together well start to pour in your red wine and mix away with your hands. You want to be sure you don't miss any ingredients in the bottom of the bowl.
Its very important to mix all your ingredients together very well including the wine. Once you have everything in the bowl very well mixed together you can now start to make out your meatballs. You will want them just a little smaller than a tennis ball. This is exactly the size they are made in Italy.
As you make them out you should wet your hands every once in a while with cold water. This will allow you to make the meatballs out easily. As you make them out lay them on a pan or tray. As soon as you get some made out you can start to brown your meatballs on all sides in a little olive oil.
As soon as you know the meatballs are browned on the side down on the pan start to roll the meatballs around to brown them on all sides. Do this over medium heat in a large skillet and don't let the meatballs overcook in any one spot.
As the meatballs get browned all over you can put them onto a cookie sheet or baking pan that you have sprayed with vegetable cooking spray. When you get the pan full place it in the freezer for about four hours to freeze the meatballs solid. Do this if your going to want to save some of the meatballs to use for a quick meal another day.
If you want to use them today or tonight however once you get them browned on all sides put them into a slow cooker or crock pot and when you have the crock pot about full pour tomato sauce in over the meat balls and cover them. Cook on low for six to eight hours depending on how hot your crock pot or slow cooker cooks and you'll have perfectly cooked meatballs.
I like to serve my spaghetti and meatballs in small dishes so I can sprinkle the top of each little dish with fresh grated Parmesan Cheese and shredded Mozzarella Cheese and then I set each small dish under the broiler to just melt the cheese before I serve each small dish of Spaghetti and Meatballs to each person cautioning them that the dish and the food is hot.
As an executive Chef in Florida at several different restaurants I made the hot servings of Spaghetti and Meatballs in individual dishes and served it to each person and people just simply loved it that way.

They make their meatballs about the size of a tennis ball and they precook them in a large skillet on all sides before they put them in the tomato sauce ( they call it gravy ) to finish cooking before they serve them with the tomato sauce and the spaghetti.

Let me tell you something else here about cooking your spaghetti (pasta). They don't add oil or butter to their pasta when they cook it. They salt the water with ground sea salt but that is all. And they slightly undercook their pasta compared with the way Americans cook their pasta. If you'll cook your pasta the same way you'll find it will be perfect by the time it makes it to the table especially if you pour hot sauce over it.
Its important that the water be salted with ground sea salt and boiling well before you put the pasta into the boiling salted water. Any pasta will turn out better if you will cook it this way.
Browning Your Meatballs, Special Instructions For Perfect Meatballs.
Once you get your meatballs made out about the size of a tennis ball or a little smaller you'll want to brown them in a little olive oil until they are brown on all sides. Cook them on medium heat being sure not to get your pan to hot. You want to make sure that your meatballs get brown on all sides so they will be pleasing in appearance and they will finish cooking in your tomato sauce. Be sure that while they are cooking in the tomato sauce ( gravy as the Italians Call It ) that the heat stays low enough under the pot of tomato sauce to keep the sauce hot and the meatballs cooking so they get good and done in the center of the meatballs.
Cook Your Meatballs In A Large Crock Pot Along With The Tomato Sauce.
You can do what I do and cook your meatballs after browning them on all sides in a large skillet. Put the meatballs into the bottom of a large crock pot or slow cooker after spraying it on the inside well with a spray vegetable cooking spray. Cover the meatballs with tomato sauce and cook them on low for six to eight hours and you'll have perfectly cooked meatballs. All you have to do now is cook the spaghetti pasta and your ready to serve your meal.
Fresh Grated Parmesan Cheese
You can use the grated Parmesan Cheese that comes out of the plastic jar or you can go to a local supermarket or grocery store deli and buy a piece of fresh Parmesan Cheese and grate it yourself. Once you start using freshly grated Parmesan Cheese you'll never go back to using the stuff that shakes out of the plastic container.

You can make really wonderful meatball submarine sandwiches out of these meatballs. When I make the meatball submarine I split each meatball in half and after toasting the submarine roll under the broiler with butter I lay the meatballs half's cut side down on the sub roll and then I put on some tomato sauce. I then put on shredded Mozzarella Cheese and a sprinkling of freshly grated Parmesan Cheese. The sandwich then goes under the broiler to just melt the cheese. I offer sauteed mushrooms, sauteed sweet onions, sauteed sweet peppers, and dry powdered oregano on the side so people can add what of the sides they want to their meatball sandwich.

Homemade Italian Tomato Sauce
Here I'm going to share with you one of the best recipes ever for making a homemade Italian Tomato Sauce that is just perfect for serving over pasta, on meatballs, or etc. If you'll follow along with this recipe and make this tomato sauce you'll find out you have one of the most perfect authentic Italian Tomato Sauces you'll ever eat in your life. Ingredients For Your Italian Tomato Sauce
1. Two Cups Red Bell Peppers Diced Very Fine.
2. Two Cups Green Bell Peppers Diced Very Fine.
3. Two Large Jalapenos With The Seeds, Stem And Membranes Removed And Diced Fine.
4. Four Large Sweet Onions Diced Very Fine.
5. One Fourth Cup Minced Garlic.
6. 50 Roma Or Italian Plum Tomatoes Peeled And Diced Fine.
7. Two Cups Red Wine.
8. Two Tablespoons Fresh Basil Chopped Very Fine.
9. Two Tablespoons Fresh Oregano Chopped Very Fine.
10. Two Teaspoons Ground Sea Salt.
11. Two Teaspoons Fresh Ground Black Pepper.
12. Small Hand Full Fresh Parsley Chopped Very Fine.
13. Two Tablespoons Italian Seasoning.
14. Two Cups Water.
15. Five Six Ounce Cans Tomato Paste.
I start off by dicing the tomatoes very fine including the skins. I usually run them through the food processor and chop them very fine.
I spray a large stock pot very well on the inside with vegetable cooking spray and then I add the tomatoes, the wine and the water. I turn the pot on medium heat and cook until the tomatoes are cooking down and coming apart.
I then add in all the other ingredients but the tomato paste and cook for 1 1/2 to 2 hours on medium heat until the sauce cooks down and comes together very well. It is at this point that I add the tomato paste. I let the tomato sauce cook on for about 30 - 45 minutes more and what I end up with is the best Italian Tomato Sauce your ever going to taste in your life. It is so very good.
