Updated on June 28, 2012

I am hosting several bridal luncheons in the next few months and I've been experimenting with different recipes for pound cake. It's a great dessert for special occasions, and is simple, delicious, and pretty as well! Here are 3 varieties that have become my top favorites!

Lemon Poundcake

  • 2 Sticks Unsalted Butter
  • 2 1/2 Cups All Purpose Flour
  • 1 tsp Salt
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder

  • 2 tbsp Lemon Zest
  • 6 tbsp Lemon Juice
  • 6 Large Eggs
  • 1 cup of Plain Greek Yogurt
  • I cup Confectioners Sugar

  • Combine confectioner's sugar and the rest of the lemon juice in a small bowl until thickened. Add more juice as necessary.

  1. Preheat oven to 325 degrees.
  2. Mix together flour, salt, baking soda, and baking powder in a bowl.
  3. Beat butter, sugar, and lemon zest in a mixer on HIGH until fluffy.
  4. Keeping the mixer on high, add 4 tbsp of the lemon juice, and the eggs one at a time.
  5. Reduce speed to low, add half the dry ingredients, then the yogurt and the rest of dry ingredients. Mix just until combined.
  6. Pour batter into a greased and floured Bundt pan
  7. Bake for 65 minutes
  8. Let cool and pour glaze over cake.

  9. Serve with leftover blackberry puree on top!

Thank you for sharing your YUMMYLICIOUS hub. I think I will try all the flavors in one cake because I love lemons, blackberry, yoghurt and honey. Wonder how that would taste? Mmmm... I am voting all the way up and running to my kitchen now to try the all-in-one poundcake and if i succeed i will name it Summerstuff's Poundcake.
