The Cost of Making Condiments

I enjoy cooking but have never had any interest in making condiments. But I was still curious about the cost to make vs. to buy. Here are some recipes and costs for butter, mayonnaise, mustard and ketchup. Some are easy to make and some are very time consuming and require a lot of ingredients.

I've included the cost of my ingredients at the bottom of the article so you can compare to prices in your area.

Butter

2 cups of heavy cream $3.19

Yields 1 cup of butter and 1 cup of buttermilk

Cost to buy 1 cup of butter $2.50

Cost to buy 1 cup of buttermilk $.50

There are three ways to make butter – shaking, whipping or in a blender. Here are links to those recipes:

Yield 2 cups

2 Egg yolks $.33 (I have used the cost of two whole eggs)

¼ cup Red wine vinegar $.21

1 T Dijon mustard $.15

1/8 t Salt $.00 (less than a penny)

1 ½ cups Vegetable oil $.70

Total Cost $1.39

Mustard

Yield 3/4 cup

5 ½ T Mustard seeds $5.26

1/3 cup White vinegar$.09

1/3 cup White wine $1.05

2 T Shallots $.13

1/8 t Allspice $.02

¾ t Salt $.00 (less than a penny)

¼ t White pepper $.07

Total Cost $6.64

Ketchup

Yield 1 pint

1 Large red onion $.24

½ Fennel bulb $.75

1 stick Celery $.09

1 t Olive oil $.04

1T Ginger $.10

2 cloves Garlic $.10

½ Red chili pepper $.02

1 bunch Basil $1.99

1 T Coriander seeds $.19

2 Cloves $.04

1 lb. Cherry tomatoes $3.99

1 lb. canned plum tomatoes $.75

¾ cup Red wine vinegar $.63
