Yields: Dinner for two
2 petite fillets (tenderloin)
2 golden potatoes
raw baby spinach
shoe string carrots
2 pads of butter
salt, pepper, steak seasonings, to taste
1/2 tsp dill seed
1 tbs dry dill weed
2 tbs first cold press olive oil
Season fillets on both sides and set aside. (I brush on a little Bulls Eye BBQ sauce and use salt free garlic and herb and smoked paprika.)
Place potatoes in micro wave and push the potato button. Take notice of the time and only microwave for half the cycle. Remove potatoes and let cool.
Place seasoned steaks in pan safe for broiling and top with butter. Place steaks under broiler. Broil for 10 minutes on each side for medium well. (adjust time for preferred wellness)
While steaks are in broiler, cut up potatoes in cubes, as shown above, and place in stir fry pan with dill seed and 2 tbs of olive oil. Stir fry until slightly browned and then season with salt, pepper and dill weed.
Serve steak and potatoes with raw spinach salad topped with shoe string carrots and dressing of choice. Yummy!!!
