Yields: 2 pies serves 8


  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1 cup mushrooms, chopped
  • 1 bag prewashed spinach
  • 2 cups cheddar cheese, shredded
  • 4 slices swiss cheese, chopped
  • 2 pie shells, prebaked
  • 2 sticks unsalted butter
  • 4 eggs
  • two cups milk
  • 1 lb crab meat, cleaned

Veggies spinach and cheese

  1. Thaw and bake pie shells per instructions. Set shells aside. Reduce oven heat to 350.
  2. Melt butter in large pan with med heat. Saute chopped onion and garlic for 6 minutes, add mushrooms. Saute 5 more minutes. Add spinach to pan and simmer until spinach cooks down.
  3. Stir sauteed veggies, mixing to together. Add Swiss cheese and half of cheddar to pan. Cook and stir until melted. Turn off heat.
  4. Crack eggs in a mixing bowl. Poor in milk. Wisk eggs and milk together. Add salt and pepper to taste.
  5. Spoon cheesy veggies into pie shells equally. Cover mixture with crab meat. Poor egg and milk mixture over veggies and crab meat in pre baked shell.
  6. Put both pies in oven and cook for 15 minutes. Open oven and shake remaining cheddar on top of pies. Cook additional 15 minutes or until knife inserted in center comes out clean. Allow pies to cool before slicing. Enjoy the complements!!
