In a Pinch?

If you are ever in a pinch and need to make an incredible dessert, then this recipe is the one for you! It will not disappoint, as it is so moist and so easy, you will not believe that it is made from a box mix! Yes, I said made from a box mix. Believe it or not! Adding the Real Cream of Coconut Milk mixed with sweetened condensed milk after baking, makes this cake extraordinarily moist. It truly is the best coconut cake that I have ever tasted and it could not be any easier to make. You can trust me to not steer you wrong.

This over the top moist and creamy cake is by no means the fanciest cake. However, it is truly easy to make, extraordinarily moist and delicious, which is all that matters, especially when time constraints come into play.

One of my friends at work shared this recipe with me, and I made it at Christmas as one of the desserts, and it was gone in no time. It was certainly a hit with those who love coconut cake. Plus, it helped me too, as I needed the extra time to cook and prepare everything else for that wonderful meal and day!

Easy and Moist Coconut Cake Ingredients

Ingredients to make this easy and moist Coconut Cake
Ingredients to make this easy and moist Coconut Cake | Source

Ingredients

  • 1 box White Cake Mix, (I used Duncan Hines Classic White)
  • 3 Large egg whites, Cake Mix Ingredient
  • 1/2 cup Vegetable Oil, Cake Mix Ingredient
  • 1 cup Water, Cake Mix Ingredient
  • 1 (15 oz.) can Real Cream of Coconut Milk, (I used Coco Lopez)
  • 1 (14 oz.) can Sweetened Condensed Milk, (I prefer Eagle Brand - Borden)
  • 1 (8 oz.) bag Coconut flakes, (I prefer Baker's Angel Flake Coconut, Sweetened)
  • 1 (8 oz.) container Frozen whipped topping, thawed, (I prefer Cool Whip)

Time to Start Making the Cake!

  1. Follow the instructions on cake mix: Preheat oven to 350 degrees.
  2. Grease sides and bottom of 13 X 9 inch pan with shortening or oil spray. I used a clear glass pan here. Flour lightly.
  3. Blend cake mix, oil and egg whites in a large bowl at low speed until moistened (about 30 seconds). Beat at medium speed for 2 minutes.
  4. Then pour mixture into 13 X 9 inch greased and floured pan. Bake for approximately 23 - 28 minutes. It is done when a toothpick inserted into the middle of the cake comes out clean.
  5. While still warm, poke holes into the baked cake with a utility fork.
  6. Mix together the sweetened condensed milk with the real cream of coconut milk.
  7. Pour the mixture slowly over the cake while still warm and into the poked holes.
  8. Once mixture is absorbed and cooled, just spread the Cool Whip on top of the cake and sprinkle with coconut as desired.
  9. Keep refrigerated.
  10. Enjoy!

The Most Important Step for an Extra Moist Cake

Although, this mixture may seem like a bit too much when you are pouring it on top of the warm cake, you must allow the mixture time to absorb into the holes of the cake. This is the secret to what makes this cake so incredibly moist!

A Matter of Taste

When adding the whipped topping and coconut flakes to the cake, it is totally up to you just how much you would like to add. Here, I only used an 8 ounce container of Cool Whip, which was plenty, and an 8 ounce package of coconut flakes. However, it is perfectly fine to double both if you so desire!

Time to Enjoy!

I do hope you remember this scrumptious recipe when you are in a pinch for time and you need an unforgettably moist cake recipe to please all, guaranteed!

Also remember to keep this cake refrigerated, and it will still be as moist as the first day you made it.

I love coconut cake and I never buy them but now I will sure make my own, what better time than here at Easter; I will pile colored jelly beans around the bottom of it for my grandson's sake. Minus the black ones of course (which are grandma's favorite!) which I don't think look good for decorating and lucky me on that! Your coconut looks so fluffy, do you do something special to give it that look?

Checking all but funny and shared! 5 star rating cause I know it is delish!

      Hi Jackie,

Oh, yes, no excuses now, as it cannot be any easier and truly delish, as you say for sure! It is a great time for this recipe here at Easter. I am going to do that too, your idea with the colorful jelly beans. I may even cut it into the shape of a bunny for my grands to enjoy. That is so funny as I, too, love the black jelly beans! LOL

It always turns out so fluffy, which I am amazed and maybe it is due to just using the egg whites? I do have an old gold hand-mixer from the 70s I use and it only works on high speed, so maybe that is what whips it up so fluffy? I even use the mixer on blending the Real Cream of Coconut with the Sweetened Condensed Milk to make it extra smooth and creamy and, again, only one speed.

If you try to cut a piece when it is still warm (which you will do, as it is too hard to resist), it will be crumbly, but after it sets a bit, it will hold together better and especially after being refrigerated. As I have written here, it tastes just as moist the second day after being refrigerated. So, you can whip one up the night before and be ready to go the next day.

Let me know how it turns out, if you do give it a try.

Enjoy your day and I appreciate all the votes up and five star rating.

      Hugs,

      Faith Reaper

Hi Faith! Wow! Looks so good it should be illegal, and no doubt a treat for all of your fortunate and favoured guests; the snow-brothed sprinklings make it look the business - no minor feat of art in this presentation and quite inventive with the forked holes inviting the estuary of creamed coconut, married with the sweet, condensed milk to lend its secret by retaining moisture through the cakes' physical stipples, making it so appetizing for your grateful diners. It looks really good! Any more strings to your bow and you shall soon be a one-woman orchestra :)

I trust you and your family are well this day.

Thank you, and pleased to circulate your fabulous, lovingly home-made recipe.

Awesome, randomcreative! Well, then you have hit the jackpot with this recipe. It certainly is so easy, yet so unbelievably moist, creamy and delicious.

I hope you do love it. Let me know how it turns out. If you cut it while still warm, it may be a bit crumbly, but still good. So, if you let it sit a bit or refrigerate, it will hold together better and still be as moist as ever.

The first piece I cut, crumbled all over the place, and so I had to eat it : ) and then I tried a bit later for this photo here.

      Enjoy!

Oooh, you know it Sha ... a scratch cake with the cream of coconut milk ... I believe that would be so good that my tongue would slap my face! LOL, Kidding ... I really do not speak like that ...well, we do not, but had to add some southern humor or whatever you want to call it. However, I may have heard that somewhere before : ) I am giddy this night because I picked up my three very young grands (six, three and 18 months) after work, and they are always so wound up this first night at "Nanny's" house ... whew, I am worn out LOL. Yummy indeed dear one! The key word here with this one is "easy" ... truly big time easy no doubt, yet still oh so moist and delicious. I love coconut too, and what I love the most is coconut with chocolate, but that does not have anything to do with this recipe of course. I am surprised there are so many coconut lovers out there, as either I have found that either you hate or you love it ... Hooray for the coconut lovers!

      Hi Dear Debbie,

I am sorry, I am just getting on here this day. So busy with Easter plans and such, getting the house cleaned up. HP is saying your comment is spam, probably because you put your email in there? But I still have your email. Oh, sweetie, I would love to join you in your recipe publications, but this recipe is not from scratch, just "Moist and Easy" and the easy from using a box mix LOL...however, I do have some from scratch I can share with you. After Easter, I will see what I can come up with. My friend from work gave me this recipe. I do have some from scratch that you may like. Thank you for thinking of me.

Blessings to you and yours for a lovely Easter.

Just in time for Easter dinner dessert. And, as with many projects, there is always a secret step. In this case, poking the holes is the trick to getting that rich moist texture. I can almost taste this cake and can imagine the aroma it creates while baking. What a hit this will be. And, it's seems so easy to do. Thank you for sharing this wonderful recipe.

      Hi LDC,

Blessings to you on this Easter weekend. Yes, it is delicious and so easy, anyone can make it. It is not from scratch, but it is still beyond delicious and moist, and the easy part comes in from using a mix and adding the Real Cream of Coconut milk. This recipe is great for those days when you are in a pinch for a great recipe that is oh so easy. My husband loved it, so it passed the test LOL.

He is Risen this day! God bless.

      Hi Dear Marlene,

Yes, this one is so easy, you can whip it up in no time and still have time to concentrate on all of the other more involved recipes, especially for Easter dinner! I know when I do make it, it is gone in no time at all.

Yes, that is the trick to the extra moist and believe me, it is like nothing I have ever tasted ...I was so surprised at just how moist. It does smell heavenly.

Blessings for a wonderful Easter weekend.

Oh, Debbie, now, I do have my traditional southern cornbread recipe on here, but that may not be what type food recipes you want. Healthy, low-carb and gluten free are what seems to be the thing nowadays as far as recipes.

I know you will be cooking up something yummy for Easter. I hope you will be able to see your many precious grandchildren this weekend, even though they are out in Texas and you are in Tennessee. I hope they make the trip, as it is worth making the trip to see their grandmother. Family is a true blessing.

      Hi Rebecca,

Thank you so much, and this one does melt in your mouth ... I promise. It is not from scratch or anything, but it is certainly moist and EASY. Oooh, now, a coconut ice box cake sounds yummy too. I have heard of a coconut poke cake, which really may be the official name of this cake, not sure, since one of my friends at work made it and brought it to work one day, and we all just loved it. I asked her was it hard to make, as it tastes like it would be a very difficult cake to make, but when she told me in just a matter of a few seconds how to make it, I had to try it and see for myself.

Oh, my I can almost taste this cake just by looking at your great photos. I've never heard of a recipe like this one where you pour over the cake. Yes, it certainly would be nice and moist! I have bookmarked this coconut cake to make very soon.

Wonder how it would be using just plain white frosting instead of the Cool Whip?

Voted UP, shared and Pinned to my cake board

      Hi Dear Mary,

You are so kind. It is certainly very moist using the real cream of coconut milk and sweetened condensed milk poured into the poked holes. I believe any cake mix or even better from scratch cake, plus any frosting would be as awesome as ever, even better! I just made a flag cake for the Fourth with strawberries and blueberries and I added cream cheese to cool whip, plus powered sugar to make the frosting and it was awesome as well.

So, yes, anything you can come up with using the real cream of coconut milk and sweetened condensed milk combination I believe will be fabulous.

I appreciate the vote up, share and pin

      Happy Fourth dear Mary

When I was a child, I used to grate fresh coconut for my mother to make a coconut cake. What a chore that was! Now, we can buy nice grated coconut in the store.

Thank you so much for stopping by here this day. LOL, it is surprisingly delicious, yet SO very easy ... my kind of cake.

Of course, the recipe can be adapted to any recipe and just poke the holes and add the ingredients that makes it so very moist, the real cream of coconut and sweetened condensed milk combination.

Hope you are having a wonderful Sunday.

This recipe sounds tasty. The use of coconut cream is an important natural addition to our diet. I have to cut back on the sugar content and just eat a small serving though. I have ordered organic coconut cream on E-bay several times now. Thanks for sharing. I volunteer to get in the line for taste testing.

      Hello starstream,

Thank you so much for stopping by to read. It is an important natural addition ... the coconut cream, but this recipe is far from healthy lol, but easy and certainly moist. You are so wise to cut back on sugar and we have done so too, as my husband is pre-diabetic. Oh, I must try the organic coconut cream. There is your piece right there.

      Have a wonderful week ahead.

I will have to tell her that though. Yes, He is faithful to meet all of our needs and He will never forsake us. I hope you are well? I work a good distance away from home like you do, so I am tired by the time I get home. Today, there was a terrible traffic jam on the Interstate ...deadlocked. finally, arrived home a bit ago. Hi Brie,

You can but you can only use one per capsule..however, I would use only one so that leaves room for google ads.

I took all my ebay ads off, it took awhile because I have over 200 hubs but my earnings went up, so it was worth it.

Oh, really. I will take your advice, Brie. Thank you for keeping me in the know. I knew there was some issue with the ebay ads, but did not know exactly. Yes, that would be time consuming with your having that many hubs. I will slowly do the same.

Coconut grabs me and your recipe sounds wonderful! Like something I must soon make! I have never used the coconut milk except in a pie, and I will likely double the coconut topping as you suggested. But I must ask, is the cup of water added with the oil and eggs, or is it used first as you said to follow cake instructions? Seems like either would work...? (I'd, be eating mouthfuls of coconut shreds while I'm mixing... :-) ) Thank you so much for sharing this great recipe. It is a keeper for sure.

      Hi frogyfish!

I appreciate you hopping over to my side of HP Town this day. Yes, that is just in the cake mix instructions, so just follow whatever cake mix you choose. Or if you love from scratch, then go for it! Here, this recipe is so convenient, yet turns out so moist and delicious in no time at all. And you can always adapt the frosting by maybe adding 8 oz. of cream cheese with the Cool Whip, which is really amazing and adds more consistency. I love coconut too and many love fresh coconut, so however one wants to adapt the recipe is great, but the key ingredients to its moistness is the Real Cream of Coconut Milk mixed with the sweetened condensed milk.

Let me know how it turns out. Hope you enjoy it.

Have a great rest of the weekend.

      Blessings always

This looks simply delicious and tempting!

You have given a special and different touch to it by making holes and letting the cake absorb the real, sweet juices. I would definitely try this.

Voted up and pinned on my dessert board!

Faith Reaper 2 years ago from southern USA

      Hi ChitrangadaSharan,

It is very delicious indeed! Yes, it is the poked holes in the cake that really do make all the difference as to absorbing the real cream of coconut milk and sweetened condensed milk that makes the cake so delicious. You can use any cake recipe you want, but to make it extra moist, just poke the holes and fill away, and it is guaranteed to be delicious and so moist. Enjoy!

I truly appreciate the vote up and pin.

I just added the video, as it is an easy coconut cake recipe too but with raspberries LOL.

This really looks great! I have a propensity to change up a few things when i'm baking and feel i'd do same for this, not change in the sense of substitute, just type/brand etc. I'd especially want to try freshly blended coconut milk over the tinned stuff, but I know the latter is more convenient. Hopefully I can do an update post when I do try this.
