In a Pinch?

If you are ever in a pinch and need to make an incredible dessert, then this recipe is the one for you! It will not disappoint, as it is so moist and so easy, you will not believe that it is made from a box mix! Yes, I said made from a box mix. Believe it or not! Adding the Real Cream of Coconut Milk mixed with sweetened condensed milk after baking, makes this cake extraordinarily moist. It truly is the best coconut cake that I have ever tasted and it could not be any easier to make. You can trust me to not steer you wrong.

This over the top moist and creamy cake is by no means the fanciest cake. However, it is truly easy to make, extraordinarily moist and delicious, which is all that matters, especially when time constraints come into play.

One of my friends at work shared this recipe with me, and I made it at Christmas as one of the desserts, and it was gone in no time. It was certainly a hit with those who love coconut cake. Plus, it helped me too, as I needed the extra time to cook and prepare everything else for that wonderful meal and day!

Ingredients

  • 1 box White Cake Mix, (I used Duncan Hines Classic White)
  • 3 Large egg whites, Cake Mix Ingredient
  • 1/2 cup Vegetable Oil, Cake Mix Ingredient
  • 1 cup Water, Cake Mix Ingredient
  • 1 (15 oz.) can Real Cream of Coconut Milk, (I used Coco Lopez)
  • 1 (14 oz.) can Sweetened Condensed Milk, (I prefer Eagle Brand - Borden)
  • 1 (8 oz.) bag Coconut flakes, (I prefer Baker's Angel Flake Coconut, Sweetened)
  • 1 (8 oz.) container Frozen whipped topping, thawed, (I prefer Cool Whip)

Time to Start Making the Cake!

  1. Follow the instructions on cake mix: Preheat oven to 350 degrees.
  2. Grease sides and bottom of 13 X 9 inch pan with shortening or oil spray. I used a clear glass pan here. Flour lightly.
  3. Blend cake mix, oil and egg whites in a large bowl at low speed until moistened (about 30 seconds). Beat at medium speed for 2 minutes.
  4. Then pour mixture into 13 X 9 inch greased and floured pan. Bake for approximately 23 - 28 minutes. It is done when a toothpick inserted into the middle of the cake comes out clean.
  5. While still warm, poke holes into the baked cake with a utility fork.
  6. Mix together the sweetened condensed milk with the real cream of coconut milk.
  7. Pour the mixture slowly over the cake while still warm and into the poked holes.
  8. Once mixture is absorbed and cooled, just spread the Cool Whip on top of the cake and sprinkle with coconut as desired.
  9. Keep refrigerated.
  10. Enjoy!

The Most Important Step for an Extra Moist Cake


Although, this mixture may seem like a bit too much when you are pouring it on top of the warm cake, you must allow the mixture time to absorb into the holes of the cake. This is the secret to what makes this cake so incredibly moist!

A Matter of Taste


When adding the whipped topping and coconut flakes to the cake, it is totally up to you just how much you would like to add. Here, I only used an 8 ounce container of Cool Whip, which was plenty, and an 8 ounce package of coconut flakes. However, it is perfectly fine to double both if you so desire!

      This really looks great! I have a propensity to change up a few things when i'm baking and feel i'd do same for this, not change in the sense of substitute, just type/brand etc. I'd especially want to try freshly blended coconut milk over the tinned stuff, but I know the latter is more convenient. Hopefully I can do an update post when I do try this.

      Thanks for the "yummy" ... well, actually, my recipe is not raspberries or strawberry, just coconut using the real coconut milk and sweetened condensed milk to pour into the holes, which makes it extra moist, easy and delicious. I just added the video, as it is an easy coconut cake recipe too but with raspberries LOL.

      It is very delicious indeed! Yes, it is the poked holes in the cake that really do make all the difference as to absorbing the real cream of coconut milk and sweetened condensed milk that makes the cake so delicious. You can use any cake recipe you want, but to make it extra moist, just poke the holes and fill away, and it is guaranteed to be delicious and so moist. Enjoy!

      I appreciate you hopping over to my side of HP Town this day. Yes, that is just in the cake mix instructions, so just follow whatever cake mix you choose. Or if you love from scratch, then go for it! Here, this recipe is so convenient, yet turns out so moist and delicious in no time at all. And you can always adapt the frosting by maybe adding 8 oz. of cream cheese with the Cool Whip, which is really amazing and adds more consistency. I love coconut too and many love fresh coconut, so however one wants to adapt the recipe is great, but the key ingredients to its moistness is the Real Cream of Coconut Milk mixed with the sweetened condensed milk.

      Coconut grabs me and your recipe sounds wonderful! Like something I must soon make! I have never used the coconut milk except in a pie, and I will likely double the coconut topping as you suggested. But I must ask, is the cup of water added with the oil and eggs, or is it used first as you said to follow cake instructions? Seems like either would work...? (I'd, be eating mouthfuls of coconut shreds while I'm mixing... :-) ) Thank you so much for sharing this great recipe. It is a keeper for sure.

      You can but you can only use one per capsule..however, I would use only one so that leaves room for google ads.

      I took all my ebay ads off, it took awhile because I have over 200 hubs but my earnings went up, so it was worth it.

      This recipe sounds tasty. The use of coconut cream is an important natural addition to our diet. I have to cut back on the sugar content and just eat a small serving though.       You are so kind. It is certainly very moist using the real cream of coconut milk and sweetened condensed milk poured into the poked holes. I believe any cake mix or even better from scratch cake, plus any frosting would be as awesome as ever, even better! I just made a flag cake for the Fourth with strawberries and blueberries and I added cream cheese to cool whip, plus powered sugar to make the frosting and it was awesome as well.

      So, yes, anything you can come up with using the real cream of coconut milk and sweetened condensed milk combination I believe will be fabulous.

      So nice of you to visit my Hub pages this day! Oh, wow, fresh coconuts on a farm in Brazil!!! That sounds like paradise to me! Yes, with fresh coconut and from scratch and adding the real coconut milk, would make this simple and easy recipe into a gourmet one for sure!

      Well this does sound good. I have coconuts here on our farm in Brazil so I will need to make a few adjustments but I love the idea of adding the coconut milk to it. Can't wait to try this.

      Hello Thefedorows, I do hope you get to try this one when you do have sweetened condensed milk and real cream of coconut milk on hand, as those are the two most important ingredients for guaranteed moistness. I appreciate the pin and vote up!

      Hi great stuff, yes, guaranteed! However, being it is so easy, it will not keep you in the kitchen very long except maybe after baking and then eating as it is hard to eat just one piece. Lol
