Pista Kulfi is a wonderful dessert for summers. One of the most liked Ice cream in India, is not only easy to make but very Tasty too. Pista means Pistachio in English. Kulfi means Icecream. So basically it is pistachio icecream but the recipe is Indian. Everyone loves it in summers from kids to parents.

Yields: 6 servings

Ingredients

  • 2 Cups Evaporated Milk
  • 2 cups Condensed Milk
  • 16 Oz Whipped Cream
  • 1/2 Tsp Ground Green Cardamom Powder
  • 1/2 Cup Green sliced Pista (pistachio)
  • As Per Taste Sugar
  1. Pour Whipped cream in a Mixer.Add condensed Milk and mix well.
  2. Add Evaporated Milk, green Cardamom powder and sugar and mix well again.
  3. Now add pistachio to the mixture. Stir lightly so that the mixture covers all the sliced Pistachio.
  4. Now fill this mixture in Kulfi cones and put these in to Freezer for minimum of 8 hours . This would ensure the mixture solidify in to ice cream
  5. Now at time of serving, take out the cones and dip them in hot water for 5 to 10 seconds so the frozen ice cream can come out easily.
  6. Now put the kulfi ( ice cream) in plate and cut it horizontally in to many pieces ( optional).
  7. Decorate it with finally chopped Pistachio and serve.
  8. Variation: When you put the pista Kulfi mixture in the cones, you can put a Kulfi stick in the cone too so you can eat it like a Popsicle.
