One of the real secrets of this chocolate chip cookie recipe is you want to buy two pounds of bittersweet chocolate and chop it by hand into small little pieces. This will turn out much better than if you used chocolate chips. It may indeed make a messier cookie but the end product will be just packed with wonderful chocolate flavor.

You can find pastry flour in the flour section in most supermarkets and grocery stores. Be sure to purchase light brown sugar for this recipe as it will work much better than the dark. I always buy fresh ingredients for my baking as ingredients that have been setting for weeks or months on a shelf in the pantry won't produce as tasty baked goods as fresh ingredients will.

World's Best Chocolate Chip Cookies Ingredients

1. Two Pounds Of Bittersweet Chocolate Chopped Up Fine.

2. One Pound Butter, ( Have your butter soft at room temperature )

3. One And Three Fourths Cup White Granulated Sugar.

4. Two Cups Light Brown Sugar.

5. Four Large Eggs.

6. Three And One Fourth Cups Pastry Flour.

7. Three Cups Cake Flour.

8. One Tablespoon Ground Sea Salt.

9. One Tablespoon Baking Soda.

10. One Tablespoon Baking Powder.

11. One Tablespoon Vanilla Extract.

I Love The New Baking Paper Now Being Sold

I've started using the new baking paper that has parchment paper on one side and tinfoil on the other side. I always put the tinfoil side down on my baking pans or cookie sheets and cookies come off the parchment paper perfectly.

Warning About Baking Powder And Baking Soda

Always be sure that any time you use baking soda or baking powder that you use only fresh baking soda or baking powder. If you use baking soda or baking powder that has been setting in the pantry for six months your cookies may or may not turn out right.

Instructions For Making The Worlds Best Chocolate Chip Cookies

You'll want to start off by making sure that all your ingredients are at room temperature. When your doing most baking you'll find that your baking will always turn out better if all the ingredients you use are at room temperature before you start baking. There are exceptions to this though so always be sure to check out and read your recipes carefully.

Set Your Ingredients Up So You Can Reach And Get Each Ingredient Easily

I always put my cookie ingredients together in a large metal bowl and I use an electric hand mixer to mix all my cookie ingredients together. I feel that I can get the whisks of the hand mixer down into the bottom of the bowl and get all my ingredients mixed together very well. You can use a stand mixer but if you do be sure that all your cookie ingredients get very well mixed up so that you don't end up with any dry ingredients in your cookie dough.

For The Best Results Hand Chop Your Chocolate

I start off by hand chopping the chocolate up with a large chefs knife on a cutting board but you can if you wish chop up your chocolate in a food processor with a metal blade. Leave the chocolate chopped up course though. Don't puree your chocolate smooth. You want to end up with some little chunks and pieces of chocolate in your cookie dough.

I put all the wet ingredients into the mixing bowl first and then I add the other ingredients one at a time being sure to mix the dry ingredients in one at a time. This way your going to end up with the perfect cookie dough. Remember to have all your ingredients at room temperature for the best results possible.

Once all your cookie dough ingredients are very well mixed together you'll want to prepare your baking sheets or cookie sheets by lining them with parchment paper. If you do the cookie sheets this way your cookies are going to come off the cookie sheets perfectly. You can spray your cookie sheets with vegetable cooking spray but I think the parchment paper is the way to go. Especially if you want beautiful cookies.

Your going to want to pre-heat your oven to 350 degrees and be sure the oven is at 350 degrees before you put the cookies in the oven. Your oven should be equipped with a heavy duty oven thermometer because most home ovens do not cook at the temperature on the dial. So be sure that you check your oven.

Do You Want Small Cookies Or Large Cookies

You can make a choice here if you want small cookies or larger cookies. The larger cookies need to be dropped by the tablespoon full onto a prepared cookie sheet. If you want smaller cookies use a teaspoon. You can use a spoon to push your cookie dough off the spoon onto the prepared cookie sheet. If your making a lot of cookies using a spoon to push the cookie dough off your spoon will really help things along.

Be Sure Not To Overcook Your Cookies

Here's where the only hard part of this recipe comes in. Bake this cookie until it is soft and golden brown but don't over bake this wonderful cookie. I have a lot of people make these cookies and then tell me the cookies were good but a little hard. They won't be if you follow the directions. Your large cookies will need to cook in a hot oven for 18 - 20 minutes to be perfect. The smaller cookies will cook in a hot oven in 14 - 15 minutes. Don't over cook your cookies. Again don't over cook your cookies. You want your finished cookies to look about like the cookie in the photo above. If they do you'll end up with the world's best chocolate chip cookies.

Once your cookies come out of the oven let them set on the cookie sheet for five minutes. Then move them to a tray or plate.

Once the cookies are cool you can put them in an air container and keep them up for a week. Or you can make them ahead and freeze them between layers of wax paper for up to six months in a container in the freezer with a tight fitting lid.
