The True Taco Pizza

Here is a recipe that is sure to go over great with the kids. It takes all of 15 minutes to prepare and serve!

Ingredients (serving for four)

  • 3 coarsely chopped jalapenos
  • 110 oz can of diced tomatoes with green chiles
  • 1 cup sour cream
  • 2 cups of mixed Mexican style cheese
  • 4 corn tortillas
  • 1 small bag of pepperoni
  • 3 tbsp cooking oil




How to prepare:

In a skillet pour about 3 tablespoons of cooking oil. Turn burner on med high. Once oil is hot enough fry tortillas for about 20-25 seconds on each side. Then let the tortillas drain on a paper towel. Turn oven on 425.

Now spread the diced tomatoes on top of each tortilla evenly. Next sprinkle about a table spoon of the mixed cheese over the tomatoes. How ever much cheese you use is totally up to you. Once you sprinkle the cheese, place your pepperoni on top in a circle on the outer edge and then fill with one or two pepperoni's in the center of the tortilla. Now place about 3-4 pieces of jalepenos all over. Finally you want to put one more sprinkle of the mix cheese on top. Place all four tortillas on a non greased pizza pan and bake for about 10 minutes. Once the cheese is melted and a little golden your Taco Pizza's are done! Top with a dollop of sour cream and your are sure to put a smile on your family's face tonight!

      I do a variation of this with low carb tortilla's. Great for my diet and tastey. Great way to do individual pizza's for people and let them pick their own toppings.
