The Weekend BBQ, Shish Kabob Style
Every year when summer rolls around my family and I go to our local farmers market and buy a crap load of fresh fruits and vegetables. Then we fire up the BBQ! I have to tell you buying fresh and local seems to make the food taste so much better.
My family and I practically live from the BBQ all summer long, and since my kids are so picky we discovered shish kabobs are the perfect solution, not only will my kids eat the food, they can actually make it them selves. Trying to make meal time fun can be a challenge so when the weather is right I soak some skewers and lay out plate full of chopped veg and meats. The kids have fun making their dinner and so do I, after wards I do the same thing for dessert except I use plates of fruit. The kids can fill skewers with what they like and sometime we even BBQ the fruit depending on what we have and what has been chosen. One of my kid's favourites is mint pineapple; Take long strips of pineapple and roll through sugar and chopped fresh mint, BBQ for a few minutes or until a bit golden let cool and viola...
Here is one of our fav. Shish kabob recipes, it's simple and delish...
Red, green and yellow peppers, chopped
White Onions, chopped
Large mushrooms, whole
Cubed beef, sprinkled with salt and pepper and rubbed with oil
Zucchini, chopped in rounds,
Skewers soaked in water for several hours,
In separate Bowl combine...
¼ cup veg oil
2 garlic cloves minced
Pinch of dry, thyme, parsley, sweet basil
1 tsp sugar
Pinch of salt and pepper
1 tsp soy sauce
Brush mixtures on sides of kabobs before grilling, grill on low- med heat for best results. Remember to mix up your veg. and meat for even flavour. Hope you have a great BBQing season. I will add more BBQ recipes in the weeks to come. TTFN
