The Best tasting Potato Salad Ever
Just a great tasting potato salad
It has real good flavor and really easy to make.
Yeah I know what your going to say! Everybody says they have the best potato salad, but when I say this I'm not kidding, When making this potato salad it's no kidding or peeling.
It's all about the red potatoes; their waxy texture keeps the spuds intact as you mix everything together.
In a large pot, cover 3 pounds of unpeeled red potatoes with salted cold water and bring to a boil over high heat. Cook until they're easily pierced with a skewer, about 40 minutes.
Meanwhile, combine 3/4 cups each of chopped white onion,red pepper and celery, and 1/2 cup of finely chopped dill pickles, and 3 chopped hard-boiled large eggs in a large bowl.
Drain potatoes and cut into half-inch pieces while still warm. Transfer to the bowl and sprinkle with two tablespoons of dill pickles juice and 1 tablespoon of cider vinegar, toss salad gently with 3/4 cups of mayonnaise season with sea salt and freshly ground pepper.
Tip'; When making this potato salad for my friends at home I add a tablespoon of spicy mustard it makes the flavor a little better to me but at my restaurant I just use my regular recipe.
