Simple DInner Meals with a Can of Beans

A can of beans is all you need to make many simple dinner meals which may include, a healthy salad, a main course, soup or appetizer. There are many different meals you can concoct with a can of different beans--to include: black, white northern, garbanzo and pinto. Normally I like to cook beans from scratch and cook up a big batch, but if you are in a hurry and don't have the time just open a can. I always keep all types of canned beans around for a quick and nutritious appetizer or as part of a meal. Beans are inexpensive, healthy and good to eat. So start experimenting by creating different tastes with seasonings and ingredients.

Make Quick and Easy Soup with Beans

Simple dinner meals include cooking this soup in minutes to enjoy a quick but nutritious meal.

Use either black beans or white northern beans for this soup.

Open two cans of beans and drain throughly through a strainer to rid all the liquid in the can. Set the beans aside.

Saute with sesame seed or grape seed oil a variety of vegetables you may have in the fridge. Cook the veggies until tender. Good veggies are:

  • Celery
  • Onions
  • Carrots
  • Kale
  • Zucchini
  • Spinach
  • Parsnips
  • Turnips

Boil two quarts of water or chicken stock or half water and half chicken stock. When the water is boiled add the veggies and beans. Season with garlic powder, season salt, basil and oregano.

Variations on the Soup:

Add one or two of the following:

  • Brown rice
  • Pasta
  • Couscous
  • Canned tomatoes
  • Canned tomato sauce
  • Left over chicken or beef

The soup will take a total of 40 minutes and dinner is ready.


Make A Dip with Any Beans

Make a Quick Dip

Drain either black beans, white beans, pinto beans or garbanzo beans. Put one can of either of these beans in the blender and add 1 tablespoon of olive oil, 1 tablespoon of lemon juice and your choice of spices to go with the beans. Some of my favorite spices are oregano, basil, curry or thyme. Blend until smooth and serve with crackers or veggies.

Make An Easy Vegetarian Dinner

Cook up brown rice or whole grain pasta. Drain either a can of white beans, pinto beans or black beans in a separate pot with a little olive oil for about ten minutes--until hot. Add chopped parsley, oregano, basil and a pinch of cinnamon to the beans, and serve over either rice or pasta. Add salt, pepper and grated cheese to taste.

Make A Salad with Beans

Make a vegetable salad with all your favorite veggies such as:

  • Romaine
  • Spinach
  • Cucumbers
  • Radishes
  • Tomatoes
  • Peppers

Make a salad dressing of 1/4 cup of olive oil, two tablespoons of cider vinegar, two tablespoons of water and basil, oregano, thyme, season salt, pepper to taste. Put in a sealed jar and shake briskly.

Pour a can of drained black, white, garbanzo or pinto beans over the salad. Add the salad dressing over the top of the salad. Check the fridge for any leftover chicken or beef to add to the salad for one of many tasty easy dinner meals.

A few other suggestions:

Make a salad of black beans, tomatoes and chopped canned jalapeno peppers. Add some cilantro, garlic powder and cumin. You can serve this combination over lettuce.

Try the combination of garbanzo beans with tomatoes, green peppers, black olives and feta cheese for a different tasting salad. Season with oregano, thyme and tarragon. Add salt and pepper to taste

Make a salad with pinto beans, green olives, red peppers and cucumbers.

Get inventive and try almost any combination of veggies and beans.

There are so many simple dinner meals you can make with different canned beans.

      Beans are a must have staple in our our pantry. I recently sauteed some kale, added halved cherry tomatoes, and white beans, as well as a bit of olive oil and salt and pepper. A quick, healthy side dish! Thanks for sharing.

      I am reading this as I am eating a bowl of lentil soup! I am a great believer in beans anything. I love all kinds of beans - three bean salad is great to make by opening cans of beans. These are great suggestions and I like the recipes you have added. I can just open a can of beans and eat them right out of the can. That is probably a bit much for some people, but I love beans!       These are some good ideas...Just this last week I made a Chuck Wagon Bean Bake with baked, dark red kidney, and black beans and a pound of hamburger meat. No one died and the roomies said it was good. I'm calling it a win!

      Yes, agreed. I eat beans daily in a variety of ways as you suggest too. You can also drain chickpeas toss with olive oil, oregano or cumin with garlic or any other combo of spices and bake at 350 degrees for 45 minutes, then snack on the beans. Good hub idea.

      I tend to stockpile canned beans. These are great ideas for when I'm standing in my kitchen wondering what in the world am I going to cook tonight? Great for money saving,too. Very economical :)

Beans are inexpensive and easy to store in your cupboard, but I have to admit that I don't always know what to do with them....I usually add them as a side dish, but now I have lots of ideas how to incorporate them into a meal.       Hi Carol....nothing like a good old staple of beans... the can is fine but I like to bake me own with a smoked pork hock and some good old a pinch of this and a dash of that... I will need to try some of these recipes, they look great and quick...
