Three Cheese Chicken Alfredo Baked Pasta

Chicken and pasta are a great combination, both are quick and easy to cook and work with a variety of flavors and sauces. I had alfredo sauce and 64oz of rigatoni noddles in the cupboard and the idea of plain old chicken alfredo seemed so...boring. I have made that a million times for dinner, but the idea of baked chicken alfredo pasta sounded exciting! Chicken can be served in a sauce on top of a pasta or mixed together and baked. I decided to go with the mixed together and baked and came up with this delicioius baked pasta that even my two year old loved. I found a recipe online for Three Cheese Baked Pasta but it had some ingredients my husband didn't like so we kinda completely changed everything and made up our own recipe. This three cheese chicken alfredo baked pasta is really easy to make and a great way to get your husband involved in cooking dinner with you. (Which for some of us can be very difficult to do!)

  • 16 oz (6 cups) of bertolli rigatoni noodles

  • 16 oz ragu cheesy alfredo sauce

  • 8 oz (1 cup) sour cream

  • 2 large eggs, lightly beaten

  • 1/4 cup grated parmesan/romano cheese

  • 4 oz Monterey Jack cheese

  • 4-5 pieces of grilled chicken

  • 2 cups mozzerella cheese

  • Boil rigatoni noodles, drain, and return to the pot.

  • While the noodles are boiling boil the chicken breast for about 15 minutes, rinse, and than grill to your perfection. If you like seasonings you can whatever you like to add more flavor to the dish.

  • Stir together the alfredo sauce, sour cream, 2 eggs (lightly beaten before hand), and parmesan/romano cheese.

  • Slice the 4oz of monterey jack cheese.

  • Add noodles, sliced grilled chicken, and monterey jack cheese into the mixture and stir all together.

  • Spoon everything into a 13x9 greased dish.

  • Sprinkle with mozzerella cheese

  • Bake at 350 degrees for 30 minutes or until the top becomes golden brown

Some options for easy to store kitchen grills can be found on for very reasonable prices. I found that George Forman grills seem to be the most popular, I have one and can say that it works amazingly!

This dish puts a great twist on the ordinary chicken alfredo and is so versitile to meet everybody's taste preferances. It is so fast and easy to make and can also be made up to a day ahead of time so it's perfect for parties and family get togethers. Happy baking and enjoy!(:
