Tofu Burgers . Meatless Balls

These Tofu Burgers are so delicious you can eat them instead of hamburgers by putting them on a whole wheat bun with cat-sup, mustard, pickles and onions. And they are much more healthful plus your kids will also love them this way.

Then, Using the same recipe with just a few modifications, you can make the versatile tofu meatless Balls as described Below.

Ingredients

  • 1 large onion, finely chopped

  • 1 large carrot, grated

  • 1 green pepper, finely chopped

  • 1 1/2 teaspoons dried basil

  • 2 large eggs

  • 1 cup whole wheat read crumbs

  • 1/4 cup chopped fresh parsley

  • 3/4 cup walnuts, ground, or finely chopped

  • 1 tablespoons soy sauce

  • black pepper to taste

  • 3 cakes of tofu, pressed

Method Of Preparation

1 Saut'e the vegetables and basil in water until tender, about 10 minutes.

2 In a large bowl, lightly beat the eggs, then add the bread crumbs, walnuts, and remaining ingredients.

3 Mash the pressed tofu either with a potato masher or your hands and add it to the bowl, along with the sauteed' vegetables. stir well. The mixture should be firm enough to form patties.

4 Pat the mixture into 6 large " burgers". Bake on a baking sheet lightly coated with coconut oil at 375°F until golden brown on the outside, but still moist inside: about thirty minutes.

5 Serve with low fat cat-sup, tomato, lettuce, pickles, on wheat buns.

Tofu Meatless Balls

These are delicious as ho rsd'oeuvres, for parties as a main dish with gravy (Like meatballs), and for general munching. These balls have approximatelythe same amount of protein as regular meatballs and none of the saturated fat. And the've got fiber in them, while meat, of course has none.

For about 3 dozen balls, add the following ingredients to the basic burger mix described above:

Ingredients

  • 3 garlic cloves, minced

  • 1 teaspoon ground fennel seed

  • 3/4 teaspoon dried oregano and an additional 1 1/2 teaspoons mustard.

Method of Preparing

1 Form 1 1/2 inch balls and bake at 350°F on a baking sheet thinly coated with coconut oil for twenty to thirty minutes.

2 Serve with gravy (Like meatballs), in a pita pocket like falafel, or on their own as ho rsd'oeuvres.
