Tomato Mozzarella Salad
Easy to make, delicious, and good for you!
Tomato Mozzarella Salad is one of my favourite lunches as it tastes great and is so easy to prepare. The key for me is to make sure you have fresh ingredients and high quality mozzarella.
What you need
- 1 Fresh Mozzarella Ball
- Italian Salad Leaves
- Extra Virgin Olive Oil
- Shop Bought Balsamic Vinegar Dressing *
- Salt & Pepper
* You could make your own dressing but I aim for this dish to take less than 5 minutes to prepare
Select 3 or 4 tomatoes depending on the size of them, and place upside down on a chopping board. Make 4-5 parallel incisions about three quarters of the way down through the tomato, making sure you don’t slice all the way through.
Open your mozzarella and drain off the fluid. Cut the ball in half and then slice into thin pieces, large enough to go in the incisions in the tomatoes. Gently push the slices of mozzarella into the incisions in the tomatoes.
Take a clean plate and add a covering of the fresh Italian salad leaves. Arrange your tomatoes on top of the leaves.
Drizzle a small amount of extra virgin olive oil over the tomatoes and leaves, not too much though. Add a good sprinkling of salt and pepper, and finally lightly pour some balsamic vinegar dressing over the tomatoes. That’s it! That simple!
