Tony's on mainstreet secret White Chicken Nacho Recipe
Tony's on main street is a very popular restaurant in St Charles. In fact there are several Tony's restaurant's everywhere. My x husband used to work for this restaurant back in the kitchen as the head chief. This is their exact recipe- so don't be fooled by others on the web. Every one comes in just to get some of tony's White Chicken Nacho's no matter how far they have to drive. Let me just tell you that once you make this recipe you will make it forever. It has become a part of our family recipe collection, our kids love it and it has a very good flavor to it. You can serve it as a main dish- or even as an appetizer. Tony will probably be mad at me- but oh well..:)

Tony's on mainstreet famous White Chicken Nacho Recipe
1lb white American Cheese thin sliced (From the grocery store deli)
1/4 lb Pepper Jack cheese.
1 1/2 lb Provel cheese.
Big container of half n half
Minced Garlic 4 scoops
6 minced shallots (in the fresh spice isle in the grocery store)
3 T fresh parsley.
2 T minced red bell pepper.
1/4 c white wine. (prefer the real stuff but if u have cooking wine that's ok)
1/2 Rotissery chicken cooked (from the grocery store) or use 2 good size boneless chicken breast.
Lawry's seasoning if you are using chicken breast not rotisserie chicken.
Montreal steak seasoning.
You can either use a cooked rotisserie chicken. (I prefer this better- it also gives you the option to add more chicken if you so desire). If you are using chicken breast than you want to cook them on the stove top with a little lawry's seasoning. Once they are cooked than you want to cut the chicken up in small pieces not cubed.
Place 1/2 of the half in half in a big pot on the stove. Place 1/2 of your cheeses in the pot on medium low and melt very slowly. If you do not melt slowly than the cheese wont mix properly with the half-n-half. Continue to stir so the cheese wont burn. When your cheese is melted you want to add the minced garlic, minced shallots, parsley, minced red bell pepper, and mont seasoning. Add remainder cheese, remainder half-n-half to keep a somewhat thin consistency, and white wine. Cook the cheese down real good and add your cooked chicken. Serve over tortilla chips. Serve immediately.
This recipe is phenomenal and let me tell you- you wont be disappointed. You can even fool your family into believing you are a famous chief with this recipe. I did....lol
