Best Dessert and Cake Recipes for July
July's fruit filled, caramel soaked, chocolate filled, heavenly puddings for you to try. July is a special month as it's my birthday month and one if not two of these puddings will be putting in an appearance on my plate very shortly.

Heavenly Cake Baker (HCB): Ice Cream Cake
This just makes my mouth water so much and my heart want. For those of you who haven't heard of the Heavenly Cake Baker (see link on the right) it was a two year challenge where lots of amazing bakers took the challenge to bake specific cakes at specific times, there are a number of rules and you can find them on the right hand side of the web page on the link provided. Here is one of the amazing cakes that they all created and it is spectacular, the use of Marsala wine, homemade ice-cream and deep dark chocolatey sponge makes this for me one of the most delicious ice-cream cakes I've tried.
HCB; Buttermilk Cupcakes
I couldn't resist including another of the Heavenly Cake Baker's recipes - cupcakes, but not just any cupcakes, these light delicious buttermilk and chocolate pieces of heaven will surely delight everyone for parties, special events or just plain sitting down with your friends over a cup of coffee and gossiping - actually there's not a lot of talking going on when these are around - it is delightfully quiet - until they've gone!
Caramel Apple Pancakes
First on this month's list has to be these special Apple Pancakes doused liberally in a deeply satisfying caramel apple sauce. I could have reduced the size of the photograph but I just had to show you this in as much detail as I could possibly get away with - glorious aren't they?
As a family one of our favourite things is pancakes, and they come in all sizes, types and colours, Shrove Tuesday is my husband's time to shine with those beautiful thin crepe-like pancakes that fill a whole plate, a squish of fresh lemon juice, a sprinkling of golden caster sugar and I am in love all over again (with him of course, yes and maybe the pancakes too). My daughter likes Sunday breakfast to be American thick pancakes shaped like Mickey Mouse's head covered in golden syrup and far too much sugar, and my personal favourite are these wonderful, decadent, fluffy Caramel Apple Pancakes from the Diva Eats World website, this photo alone is enough to make me dive into the the kitchen and start whipping up a batch, served up and drowning in the sauce and those wonderful thin slices of apple that melt in your mouth, strictly speaking these aren't dessert - they are dinner - I'd forgo all other courses as long as I had these I'd be happy.
Better Than Crack Brownies
I have to admit that the thing that attracted me first of all to these delicious brownies was their name 'better than Crack' never having taken Crack I'm pretty sure that since I get my 'highs' from all those things sweet (like my daughter) and naughty (like my mind).
These little beauties come from the How Sweet It Is website, one of my favourite cooking internet sites to browse in the small hours when I can't sleep, unfortunately at that hour I also can't cook (which is probably a good thing) as my daughter sleeps in the bedroom above the kitchen and she would be sure to stumble down the stairs to join me if she smelled anything half as good as these Brownies in our family oven. I hope you enjoyed these as much as we did this weekend when there was a girlie sleepover - I use the word sleep lightly here, not much sleep went on to be honest but not a morsel was left by the next morning and they were all demanding pink pancakes (yep, pink).
Momofuku's Crack Pie
Speaking of crack this is the recipe for the famous Momofuku Crack Pie, here in the UK we don't yet have (I'm saying yet in hope) the restaurant group Momofuku which has been achieving great success in the States. This pie is one of their 'have to try' pies and retails at $44 per pie, yep $44, or $5.25 a slice, you know that with a price tag like that it has to be good. BUT, if your budget doesn't quite stretch to paying out $44 for a pie you can make it yourself using the recipe that you will find at the Momofukufor2 website linked below.
I will be making this pie in a couple of days time as it is going to be my birthday present to myself and to my family, yes I'm promise I'm going to share it. My friend Jane is now jumping up and down in her chair with joy and anticipation - in fact she's probably looking for a fork right now.
Peach Bourbon Cupcakes

Yes you read that correctly, Peach and Bourbon in a cupcake, divine right?
I adore peaches, strangely enough I'm not very keen on the furry peel, almost like biting into a baby rabbit's bum (well I never said I was sane). But give me peaches peeled, poached, baked etc. then I'm a very happy bunny (unbitten). These gorgeously cute cupcakes are perfect for this Summer's teatime treats or a special day with those near and dear to you. And if you're worried about the idea of the alcohol in them it's only a tablespoonful of that dark warming liquid, nothing overpowering just enough to heighten the taste of those perfumed peaches.
Maple Pecan Streusel Pumpkin Bread
In these rainy, dreary days of an English Summer (trust me it's wet and miserable even for England), I mean for goodness sake it's July where is the SUN???? So looking for divine inspiration in the kitchen it has to be something to produce a bit of fake sunshine and what could be better than cake filled with sunny pumpkin gold colour, this wonderful pumpkin bread smelling of spice and stuffed with wonderful pecans is just the thing to bring the sun out from behind the clouds, well even if it doesn't with a lovely cup of tea or coffee and a few slices of this moist and crumbly bread you won't mind the rain one bit.
Flourless Chocolate Cake with Raspberries aka La Bete Noire
This recipe is easy, easy, easy and comes out perfectly fabulous every time, this comes from the kitchen of the What A Girl Eats website and her delightly ramblings of the love she feels for chocolate and specifically this delectable cake is quaint and girlie and wonderful. One of the reasons I have included this is because my son's girlfriend, hi Laura, has an allergy to flour and so this will be just perfect for a birthday treat - would you like me to make this for you Laura?
Caramel Apple Cookies
I love the combination of caramel and apples, that cinnamon spiciness is so deep I want to wrap myself in it and stay there, serves these as an after dinner dessert when you can't possibly eat a larger dessert, or served up still slightly warm with some vanilla ice cream. These cookies are a statement of just how good the simple things in life can be, apples from the trees in the garden, and a quick, clever piece of cooking which fills the kitchen with the most amazing smells - I love that when my children eventually leave home and go off to investigate the world whenever they smell and taste this combo they will remember me and feel loved.
Doesn't this just make you smile? Summer on a plate is a typically English Strawberry Tart glazed to perfection and filled with lightly whipped cream cheese filling, I know some people prefer the sweet custard filling but strange as it sounds that is one of my pet hates. This floats my boat, I adore anything with strawberries BUT they have to be British Strawberries, the supermarkets around here are full of strawberries from every other country under the sun, why are we flying tasteless watery strawberries all the way from other countries when we grow them so beautifully here. Well I'm lucky as my husband's allotment is about to produce gorgeous, succulent organic strawberries by the ton load just in time for Summer and this is one of the wonderful concoctions that I will be making when they arrive in my kitchen.
Chocolate Strawberry Shortcake
The problem with looking at strawberry recipes is I can't just offer you one, that would be rude, so here is another - very simple recipe for a crumbly shortcake topped with syrupy strawberries, whipped cream and a glossy dark chocolate ganache - so easy to put together and it will disappear almost as quickly as you made it.

Last but not least are these delicious Cookies n' Cream Parfaits - this is a special pudding, it look spectacular and requires NO COOKING at all, yes I know that's a strange thing to say on this food roundup, the recipe is one of taking good quality ingredients (the best you can find), your favourite cream cookies and turning them magically into these amazing looking Parfaits that everyone will love. I mean if you really want to cook any of these I'm sure you could use your own homemade cookie recipe or make your own Belgian chocolate pudding but the great thing about this recipe is that you don't have to and it will mean more 'you time' to put your feet up, talk to your guests and family and enjoy the evening, it's time to relax and enjoy with this little glass of heavenly pudding.
