Another favourite yet easy dish. Alter the number of eggs depending on your appetite. Normally two per person is sufficient. The fruit in this recipe gives the curry a sweet side (which is great for children) but if you want to counter that, just add extra curry powder. Finely chopped vegetables keeps the chopping skills honed!

Ingredients

  • 200g / 8oz Basmati rice
  • ½ tablespoon Oil (your preferred)
  • 1 Onion, finely chopped
  • 1 Carrot, finely chopped
  • 1 Apple, finely chopped
  • 2 teaspoons Curry powder
  • 2 tablespoons Plain flour
  • 300ml / ½ pint Milk
  • 300ml / ½ pint Stock
  • 4 Eggs

Instructions

  1. Bring a saucepan to the boil, lightly salt and add the basmati rice.
  2. Boil rapidly for 5 minutes.
  3. Put the eggs in another saucepan cover with water and bring to the boil.
  4. Simmer for 10 minutes.
  5. While the rice and eggs are cooking, heat the oil in a large wok or lidded frying pan.
  6. Add the chopped onion and carrot, and allow to cook for 2-3 minutes, constantly stirring.
  7. Add the apple and curry powder and fry for a further minute or so.
  8. Stir in the flour, then slowly add the milk and stock – stirring all the time.
  9. Then simmer, stirring occasionally until the sauce thickens.
  10. Season to taste.
  11. Once the rice has cooked for 5 minutes, drain the excess water from the rice saucepan and cover for 5 minutes.
  12. Once the eggs are cooked, drain the hot water away and run cold water into the pan.
  13. Once cool enough to handled, peel the eggs.
  14. Cut in half.
  15. Before serving, fluff the rice with a fork to separate the grains.
  16. Serve the rice on a plate with the eggs on top and the sauce poured over them.
