Here we are using our trusted low-cost vegetarian alternative to mince – red lentils. Very tasty; high in protein and looks almost like the “real” thing.

Yields: Serves 2

Ingredients

  • 200g / 8oz Spaghetti
  • 200g / 8oz Red lentils
  • ½ tablespoon + ½ tablespoon Oil (preferably olive)
  • 1 Onion, chopped
  • 1 Carrot, diced
  • 1 Tomatoes (tinned)
  • 2 teaspoons Mixed herbs
  1. Bring a large pan of water to the boil, lightly salt, pour some olive oil in (½ tablespoon) and add the spaghetti.
  2. Stir the spaghetti with a fork to ensure it doesn’t stick. (Do this every minute or so, during the first 5 minutes of cooking time.)
  3. Bring a small pan of water to the boil and add the lentils. Boil until soft (about 5 minutes). NOTE: Do not cover the pan with lentils in as the water is likely to boil over.
  4. While the pasta and lentils are cooking, heat the oil in a large wok or lidded frying pan.
  5. Add the chopped onion and carrot, and allow to cook covered until the onion is see-through. (About 5 minutes.)
  6. Add the tomatoes, lentils and mixed herbs. Add seasoning.
  7. Test the spaghetti – it should have a slight “bite” to it (al dente).
  8. Once cooked, drain the water.
  9. Add a dash of olive oil.
  10. Put the pan lid back on and give it a shake to coat the spaghetti lightly in the oil. (This also stops the spaghetti from sticking together and going too hard.)
  11. Season the “mince” mix and serve.
