This is a really quick and easy recipe. The key to getting this right is the sauce. If you can make a roux, then this meal can be made as quickly as it takes to cook the pasta. Another family favourite. Add pies or carrots or a salad for added goodness.

Ingredients

  • 200g / 8oz Macaroni
  • 25g / 1oz Butter or other fat
  • 25g / 1oz Flour (plain)
  • 500ml / ¾pint Milk
  • 1 generous teaspoon Mustard (English)
  • 50g / 2oz Cheese (cheddar), grated
  1. Bring a large pan of water to the boil, lightly salt, pour some olive oil in (½ tablespoon) and add the macaroni.
  2. Stir and allow to simmer uncovered for the cooking time (normally around 12 minutes).
  3. On a low heat, melt the butter in a pan and add the flour.
  4. Stir until the mixture forms a smooth paste which leaves the sides and base of pan cleanly.
  5. Cook for a minimum of 2 minutes to cook out the taste of the flour.
  6. Turn the heat off.
  7. Pour in a tablespoon or two of the milk and mix in until smooth.
  8. Keep adding small amounts of milk and mixing in until smooth.
  9. Once you get to a fairly runny consistency, add the rest of the milk and mustard.
  10. Bring the mixture to the boil, stirring all the time (preferably with a balloon whisk).
  11. Once boiling, turn the heat down to a simmer and stir in the grated cheese.
  12. Ensure all the cheese is melted.
  13. Drain the macaroni well.
  14. Add the sauce. Stir and season to taste.
  15. (Optional: Grill until golden brown)
  16. Serve.
