Vegan Cooking, spaghetti with fresh farm sause
A vegan recipe for the guys
Here is a recipe for men who like to eat. It is packed with protein and vitamins and easy to make. It keeps you going after a long day at work.
Spaghetti with Farm Sause
3 tablespoons of olive oil
2 cloves of garlic crushed
1 large green pepper sliced
1 small chopped onion
2 cups of fresh crushed tomatoes
3 tablespoons of parsley
1/2 cup of zucchini chopped into small squares
1/2 cup of eggplant chopped into small squares
1/4 cup of mushrooms salt, pepper, and oregano to taste
3/4 cup of olives (with the pit removed)
Cook at low to medium heat for about 10 minutes in a large deep skillet or pan sprayed with olive oil. Simmer and stir. When onions are carmelized add 3/4 cup to a cup of cooked white beans. Then add 3/4 cup of black olives. Cook and stir for 2 more minutes. Serve over cooked whole wheat spaghetti and top with 4 broken fresh basil leaves and a sprinkle of parmesan.
