Vegan Lunch in Minutes
Quick and easy meal
Planning a luncheon with friends? Here is a great recipe that is quick, easy and done in about ten minutes. It is so healthy yet, tastes so good your friends will think you spent hours in the kitchen.
Vegan Lunch Pasta
8-10 dark red tomatoes
1/2 medium size onion
1 green pepper
1 can of store mushrooms
1/4 cup of olive oil ( or grape seed oil )
2 tablespoons of crushed garlic
dash of sea salt and crushed black pepper
3 fresh leaves of basil
1 teaspoon of oregano
1 bay leaf
1/2 bag of wide egg noodles ( 6 oz. needed )
In a large skillet pan cook olive oil and tomatoes. Wash and slice a green pepper and 1/2 an onion. Add these to the tomatoes. Add the crushed garlic and a can of mushrooms. Now add all of the spices to the mixture and simmer. Don't forget the bay leaf.
Cook until the vegetables are softened. Add two cups of water and pour over the top of the sause. Add 6 ounces of dry wide egg noodles right to the mixture and cook on high for ten minutes. Stir occassionally.The noodles will fully cook in the sause. When the noodles are done spoon out the bay leaf.
Serve this dish with parmesan topping, a tossed salad, and whole wheat breadsticks sprinkled with garlic.
