Vegan "peanut butter cup" cookies with healthy dark chocolate

  • 1 can cooked pumpkin, organic
  • 2 cups freshly ground peanut butter and chocolate chips, You can also buy this pre-mixed at your grocery store.
  • 1/2 cup Sweetleaf, sugar/stevia mix
  • 1 cup water
  • 2 tablespoons vanilla
  • 4 cups oat flour, any type baking flour will work
  • 2 tablespoons cinnamon
  • 2 teaspoons baking soda
  • 2 cups dry roasted peanuts, salt-free
  • 2 cups vegan chocolate chips, I used 2 different kinds just for fun

  1. Pre-heat the oven to 350 degrees.
  2. Measure out and mix all the dry ingredients into a large bowl. Measure out and mix all the wet ingredients into another large bowl.
  3. Add the dry ingredients to the wet by slowly adding the dry.
  4. Once all the ingredients are incorporated, prepare your baking or cookie sheet with either a light layer of oil, a sil-pat, or parchment paper. I use both the sil-pat and parchment (not on the same cookie sheet , of course). Why add unnecessary calories?
  5. You can use 2 teaspoons or the ice cream scoop to place your cookies on the baking sheet. No need to worry about spacing, the cookies do not spread. Just give them a little space to bake.
  6. Bake for 18 minutes and then just try to keep people out of the kitchen! Once fully cool, store in the freezer in a freezer container for up to 6 weeks.

This version came to me one night when I was happily munching on version two of my vegan cookie series. My husband had a craving for chocolate and found some dark chocolate peanut butter cups hidden in the kitchen closet. I keep them around for just such cravings. Then a thought occurred to me: why not make these cookies so they satisfy the chocolate AND peanut butter flavor cravings we all have? Hence these cookies were born!

I have given them out to friends and family and received the big thumbs up. Not only are they healthier than most cookies, they are easy to put together, money saving, and you can control all the ingredients. The recipe makes quite a few but that's the beauty of it. They store nicely in the freezer. This way you only need to dirty up the kitchen once a month to make cookies instead of every week; unless of course you eat lots of cookies!

As for the peanut butter and chocolate mix, you have options. My grocer has a peanut grinding machine for fresh peanut butter. They even have a grinder version for dark chocolate chips that grind right into to the peanut butter. If you don't have that option at your grocer, look for it already prepared in a jar. If you don't have either, no worries, it will taste just as fab with plain peanut butter. This recipe will also work great with your gluten-free flours, too. Try this recipe tonight!
