Vegetarian Vermicelli Noodles Pasta (With Pictures)

Vermicelli noodles are the small noodles found in many Vietnamese foods or in many Asian foods in general. They are easy to digest as they are high in fiber and due to their small size kids will have no trouble eating them.
There are many variations to the Vermicelli noodles pasta. Many add soy sauce and vegetables with meat, while some like to eat them without any flavoring.
This recipe is a perfect mix of east meets the west!

There are many vermicelli brands out there. However, this is the brand I buy and trust as after boiling it comes out just the right consistency. You want to make sure to read the instructions for cooking vermicelli noodles as they cook quickly and you ofcourse want to keep them al dente!
Recipe for Vermicelli Noodles Pasta (Vegetarian)
This vegetarian recipe is sure to be a hit in your family at dinner time!
- Half Bag vermicelli noodles
- Cup of mixed salad, washed
- 2-3 sweet peppers, chopped
- 2-3 teaspoon (or more) salt
- 1 tablesoon turmeric
- Half jalapeno, chopped (Optional)
- 3 tablespoons oil or butter
Here's a quick guide to making Tasty Vermicelli Noodles Pasta
Step 1- Start by chopping sweet peppers and jalapeno
Step 2- Wash store bought salad and put it aside in a bowl
Step 3- In a pan, heat oil or butter.
Step 4- In another pot boil water and add vermicelli noodles ONLY 5 minutes before you are ready to mix the veggies and noodles
Step 5- Once oil or butter are heated, add peppers and salad but NOT jalapenos yet. Be sure to stir
Step 6- Add salt to veggies and stir
Step 7- Add turmeric and stir
Step 8- This is how it will look like after you put salt and turmeric and stir
Step 9- While veggies are cooking, add noodles to the pot with boiling water and cook noodles for about 5 minutes
Step 10- Drain noodles and sprinkle with cold water
Step 11- Add noodles to the veggies and stir quickly
Step 12- Add optional Jalapenos and stir
Serve hot or cold!

Vermicelli is a very popular type of pasta used worldwide. For example in India vermicelli can be used to a sweet dish called 'Kheer' and a spicy breakfast/snack dish called 'Upama'. Both dishes are considered healthy. On the other hand, in middle east vermicelli is used by Lebanese. It is added to the rice to make Lebanese Rice Pilaf. Vermicelli noodles are also used widely in Vietnamese foods as a stir fry recipe.
