Vegetarian "Chicken" Nuggets

There isn't much that I "miss" about eating meat...except for sauces! Everywhere you go today, you are finding specialty sauces and dips for boneless chicken. I LOVE trying out new dips but the majority of them do NOT taste good on a carrot! So...I had to go investigating and creating to come up with my own vessel for these flavorful liquids!

These "chicken" nuggets were extremely easy and a HIT! I made them for my entire family and even the kids ate them like they were candy. These nuggets were great plain and even better when tossed into bar-b-que sauce. Next time, I will be making the nuggets into patties for Crispy "faux" chicken patty sandwiches!

Feel free to experiment with this recipe and make it your own as the seasonings are negotiable! toss in a jalapeno to make them super spicy or a dab of ranch dressing. The flavor is up to you!

The main ingredient in these "chicken" nuggets are garbanzo beans! Garbanzo beans are very HIGH in fiber so it s a great way to get some extra fiber into your diet even if you aren't a vegetarian. The garbanzo beans have a "buttery" texture when blended and a bit of a "nutty" taste when cooked. For this recipe, I used the beans from a can but feel free to use dried beans and soak them overnight before making this recipe if you wish.

Prep time: 5 min
Cook time: 8 min
Ready in: 13 min
Yields: 20 nuggets (will vary based on size)


  • 1 can garbanzo beans
  • 1 tsp mustard
  • 1 clove garlic
  • 1/4 cup raw oats
  • 1 egg
  • 3 Tbsp. flour
  • to taste salt and pepper

These are almost too easy!

  1. Add all ingredients to a food processor or blender and blend until smooth.
  2. Put some flour into a bowl and roll spoonfuls of the mixture around in the flour until coated evenly.
  3. I pan fried these in a bit of coconut oil BUT they can be deep fried or even done with no oil just a quick shot of cooking spray! Make sure both sides get a nice golden brown color!

      Thanks for checking it out Carb Diva! I ave used whatever I have handy! I typically use oatmeal but if I have quinoa or rice leftovers...those go in! Its a great recipe to change up and add to! Some Horseradish is awesome! I hope you like them! They only cost lie $2.00 for a whole batch--way better than the boxed ones for both cost and health reasons!

      These sound amazing! I've never before seen a recipe for veggie chicken nuggets but will try these soon. The ones in the store are good, but boy are they expensive! One question--what type of oats do you use?

      Hi, Heather!

      It's raining, thundering, and even hailing out there as I write this...perfect weather for having some of these vegetarian chicken nuggets. And you're absolutely right! They ARE easy to make! So I won't have any problem whatsoever asking my wife to make them.

      That way, she'll be kept busy while I scrounge the roadside for stuff to sell on eBay. Hmm...let's see, on a day like this, I could pick up a few pounds of earthworms. Of course, I'd have to check with the folks at eBay to see if that's allowed.

      About 7 years ago, one of my son became vegetarian so when he came for a visit, I would either cook something completely vegetarian because I don't mind having a meal without meat or I would do a meat dish that he used to love very much and have his portion prepared with tofu. So I transformed a few of my recipes for him.

      And then... he had to work almost at the North Pole so he couldn't continue to eat vegetarian 3 weeks out of 5 because he had to stay there and had no choice of what was on the menu.... so he is back on eating meat. In the meantime, my other son wanted to make sure I was staying on my toes... so he became vegetarian. So life is interesting and when we are all together I try to compromise to have everybody happy :-)

      I will keep your recipe and keep everything vegetarian that you experiment in mind to try it at our next family reunion :-)

      candynegl - This recipe totally came from a HUGE batch of hummus that I made! As for a sweet and sour sauce...I have been trying to cut out sugar and processed foods so it isn't exactly perfect but some tomato paste, pineapple juice, vinegar and a dash of soy come close!
