Vegetarian "Chicken" Nuggets
Vegetarians and Carnivores will agree on these!
There isn't much that I "miss" about eating meat...except for sauces! Everywhere you go today, you are finding specialty sauces and dips for boneless chicken. I LOVE trying out new dips but the majority of them do NOT taste good on a carrot! So...I had to go investigating and creating to come up with my own vessel for these flavorful liquids!
These "chicken" nuggets were extremely easy and a HIT! I made them for my entire family and even the kids ate them like they were candy. These nuggets were great plain and even better when tossed into bar-b-que sauce. Next time, I will be making the nuggets into patties for Crispy "faux" chicken patty sandwiches!
Feel free to experiment with this recipe and make it your own as the seasonings are negotiable! toss in a jalapeno to make them super spicy or a dab of ranch dressing. The flavor is up to you!
The main ingredient in these "chicken" nuggets are garbanzo beans! Garbanzo beans are very HIGH in fiber so it s a great way to get some extra fiber into your diet even if you aren't a vegetarian. The garbanzo beans have a "buttery" texture when blended and a bit of a "nutty" taste when cooked. For this recipe, I used the beans from a can but feel free to use dried beans and soak them overnight before making this recipe if you wish.
- 1 can garbanzo beans
- 1 tsp mustard
- 1 clove garlic
- 1/4 cup raw oats
- 1 egg
- 3 Tbsp. flour
- to taste salt and pepper
These are almost too easy!
- Add all ingredients to a food processor or blender and blend until smooth.
- Put some flour into a bowl and roll spoonfuls of the mixture around in the flour until coated evenly.
- I pan fried these in a bit of coconut oil BUT they can be deep fried or even done with no oil just a quick shot of cooking spray! Make sure both sides get a nice golden brown color!
