Hearty Vegetarian Chilli Recipe

This tasty Vegetarian Chilli recipe is perfect for a hearty meal after a hard days work. It is packed with nutritional and satisfying ingredients that will keep the whole family happy.

Vegetarian Chilli Recipe

Ingredients for Vegetarian Chilli

  • 130 gr or 3/4 cup or 4 1/2 oz Burghul
  • 2 tablespoon Olive Oil
  • 1 Onion, Finely chopped
  • 2 cloves Garlic, Crushed
  • 2 teaspoon Cumin, Ground
  • 1 teaspoon Chilli, Powder
  • 1/2 teaspoon Cinnamon, Ground
  • 820 gr or 1lb 13oz Tinned Tomatoes, Crushed
  • 750ml or 26 fl oz or 3 cups Vegetable Stock
  • 440 gr or 15 1/2 oz Tinned Red Kidney Beans, Rinsed and drained
  • 440 gr or 15 1/2 oz Tinned chickpeas, Rinsed and drained
  • 315 gr or 11 oz Tinned corn kernels, Rinsed and drained
  • 2 tablespoons Tomato paste, Concentrated puree
  • 4 tablespoons Plain yoghurt, To serve
  • 1 Fresh tomato chopped, To serve

Cooking Instructions for Vegetarian Chilli

  1. Place burghul into a heatproof bowl.
  2. Pour over 250ml OR or 9 fl oz OR 1 cup of very hot water and leave it until needed.
  3. Place 2 tablespoons of Olive Oil in a large saucepan and heat to a medium temperature.
  4. Add onions and cook for approximately 10 mins until soft and lightly golden coloured.
  5. Add cumin, chilli, garlic, and cinnamon and stir whilst frying for approximately 1 minute.
  6. Add the burghul to the onion and spice mixture and stir together with all the other ingredients, except for the yoghurt.
  7. Simmer on a low heat for 30 minutes.
  8. Serve with a tablespoon of yoghurt on top, and chopped fresh Italian parsley if desired.
